MY MAN, that recipe was AWESOME, thank you, my family thanks you as we LOVE lobster bisque. I make it once every couple years, but the traditional style that takes 5-6 hours so it's more of a special occasion treat because of all of the effort it takes to make. Your recipe takes about an hour, maybe a little more, but the resulting flavors are just as good, just a lot more texture. FYI, I used chicken broth in lieu of the tomato bouillon, and Cognac instead of red wine as that's more the traditional flavor my family is used to, oh, and 1/4 of butter at the end before the lobsters go in. AMAZING, thank you again!!! Next time I will use the "Better than Lobster" bouillon, I didn't have any at the house, and a double the butter and it will be better than the 6 hour stuff, guaranteed. We all really enjoyed all the textures, and it really helps with the depth I feel to have that mouth feel instead of emulsifying everything towards the end. The corn starch and cream over the caramelized onion was a GENIOUS IDEA! God Bless you and your family for sharing this with the world...
I see this is an older post, but just had to say that it looks so good and fresh, not to mention affordable. I can see it being the base for many shellfish bisque. I don't know about langostine in my location, but I was thinking maybe shrimp, rockshrimp or crawfish, all plentiful and affordable in my area. Oh my, going to my fish market tomorrow, what decadence! Thank you for teaching, and subbed.

I'm a little late responding to this but I think it's great that you found a recipe you can rely on, for lobster bisque. Because it's getting colder, I decided to whip out a chowder with carrots, corn and peas. Just by itself it was great but I added a pound of chopped cod, as well. 😋

Technically you can do whatever you want, but I wouldn't recommend it. What I am recommending is the Langostino Lobster tails which are a fraction of the cost and no more than the price of Shrimp per pound.
Too chunky for me. I'll use the immersion blender to mine and the lobster chunks are the end. Good recipe though! I'll try it for the flavors and spices. Thanks! 😁
Just chicken bouillon instead. Technically you can use half and half but you're going to have a harder time thickening it up without flour, cornstarch or just plain ol' reduction. I stand by my recipe, the way its written.
