    How to make tasty triple-fried chicken thighs that are juicy yet crispy on the outside, you will see how to make a ginger-soy marinade, the marinade will be used to tenderize and flavour the chicken thighs, after that, you will be shown how the Japanese triple frying process works so that your chicken is both juicy and crispy.
    Cooking Equipment used in the video:

    ingredients:
    100g soy sauce (75ml)
    25g grated ginger
    25g sake (25ml)
    18g mirin geni.us/Rl1Ba (10ml)
    10g sugar
    600g chicken thighs
    1 lemon

    Triple frying is also supposed to be the recipe for the best chips / fries.
    By the way - another way to make a crispy outside is multiple coating: in water/eggwash, then in starch/flour, and in panko breadcrumbs. And repeating it 2-3 times (water-flour-panko).

    Amazing! I used to double fry: for a bigger chunk: to fry it a a 150°C until it's done. Then at a 190°C for just a minute or so. To crisp it up. But I'll surely try this on smaller bits. I think the key is to reach the core temerature you need to be safe with chicken. Isn't it?
    Today, I wanna try to deep fry white mushrooms in a batter with IPA. To see, if it makes a difference to other beer.
    I'll see, how that will turn out.

    What do you recommend as frying oil
    My bf complains that he has to change the oil so often (like every 4 uses) he uses sunflower oil atm (or canola, not really sure)
    Is there a better oil that needs less changing ?

    From what I've seen potato starch is the more common breading for stuff like this..though where I live I'd have to go with corn starch which is MUCH easier to find..I have to either order potato starch online and have it shipped to my house or find a decent international food store because most of the places where I live don't carry potato starch at all.

      Yes thats the same reason for me in spain, well there is one place that has it but its quite far from where I am... but corn starch is quite fine to use if potato starch is hard to find.

    In the video you say 18 grams of mirin yet in the description box it says 10. Which is correct?

      It was supposed to be 18g and 10ml, since mirin is denser than water its more grams per ml.
