Y to peel skin of groundnut, that pink skin has good nutrients.
For curries, peanut skin will not make the gravy smooth. For chutney powders, normally one can let skin on. Also skin has more cholesterol too...

Nice recipe.. but one piece of advice for you - brinjals should have thick stem, not thin one.. these ones had seeds inside, brinjals should be seedless.. for that, you should buy hard brinjals with thick green stems.
