Modern ovens don't have to be scrubed to be clean. There is an option for it to clean itself so it is not that impressive that it is clean, but it is satisfying to see it spotless.
Honestly if find this relaxing if I was the one baking. Cause I’m by myself, everything so organized and neat, everything measured correctly, no one bothering me, no one there to mess me up or distract me. This is why I like doing things alone

And then your dad comes in, disturbs you, makes you anxious and then starts ranting about youre making a mess in his kitchen (which you aren't but you can't say anything out of fear he might do something) and then tells you to clean up before he comes downstairs again and you better not mess up.... This is why i never bake

She probably baked them really well. If the macaron sticks to the paper it means it hasn't been baked long enough. The ovens she has must be amazing though!

I don’t know why, but when I would make pancakes, the same thing would happen. Now though, if I make a half batch of crepes, the only thing that gets dirty is a small ladle, a pan, a bowl and a whisk. I couldn’t tell you why.

She inspired me to arrange my production in a similar way. I separated eggs recently and the VERY last egg’s yolk broke but it didn’t cause a problem thank goodness. I was able to make almost 7 batches with no issues 🥳
Didn't you actually make 1710 macaron shells, because if one sheet holds 70 and you use 2 of those and an additional 5 rows, that's already 190 per colour, and 190 times 9 for the 9 colours is 1710. Sorry for the obnoxious comment, but it was already impressive that you made 1600, but then to realize you downplayed it. kudos to you anyway!

If understand right then, step is: *1st preheating 120℃ - turn off - put the tray in to the oven (at this time the temperature drops to 90-100℃) - 2 mins *2nd preheating 120℃ - start to dry, until the temperature reaches 120℃ again (with open the oven door) - close the door and bake (don't take it out) - 12 mins *oven shower - 1 mins So total 2+12+1= 15 mins

I cannot see why anyone would not like this. She is neat, organized, clean, talented, precise and patient. These are from scratch not out of a bucket like most Bakeshop and restaurants in Canada. I do say most, i am sure we have a few that work from scratch. I know how long it takes me when i am baking. I rather like working on my own with no distractions.

@Dxlilah some may not know but almond flour is expensive 🤣 and having a oven heats evenly is key to macaroons. Which my oven sucks at 🤣 lucky make cakes.
Katherine Canon my oven doesn’t cook at the bottom so most of our cakes/pizza’s and stuff are weird but when I made macarons, they cooked properly because they’re so small so I don’t think it will matter that much. And trust me, the first batch I made looked terrible but they tasted AMAZING! So it won’t batter if they don’t look good or if they are a bit burnt.

@Dxlilah some may not know but almond flour is expensive 🤣 and having a oven heats evenly is key to macaroons. Which my oven sucks at 🤣 lucky make cakes.
Katherine Canon my oven doesn’t cook at the bottom so most of our cakes/pizza’s and stuff are weird but when I made macarons, they cooked properly because they’re so small so I don’t think it will matter that much. And trust me, the first batch I made looked terrible but they tasted AMAZING! So it won’t batter if they don’t look good or if they are a bit burnt.
Its so soothing and calming, yet I can only imagine what it feels like to micro manage every single thing going on in that kitchen

shouldnt we mix the almond flour delicately in the meringue..shes using the mixer for it but still perfect macarons..good job
While making french Macarons you do, but she used Italian Meringue method which is a bit more hearty and less finicky once the stovetop part is done.

@Channyn K actually She’s using the Swiss meringue method, the Italian method is the one you cook your sugar at 118c and pour it into your egg white ;-)
