Had it once before in South Texas. Brains have a nice custard texture, probably wouldn't eat it again. The whole head on the other hand is the best cut of meat. Called Barbacoa, dig a hole in the earth, season the head, wrap it in aluminum foil, build a brush fire over it, let it burn down, keep coals on overnight and the head is done the next day when you dig it up. Menudo made with the stomach is also excellent. Love seeing you try new things, this channel helps so much with farming ranching and homesteading, keep it up Micah!

What I tell people is the BEEF tongue is the most tender part of a beef steak/Roast you will EVER have, if the tongue is cooked the correct way, which is at least 4 different ways. Moreover, the sweetbread/brains of cooking aforementioned is to fry, bake, scramble, smoke, smother, or any combo you can think of as long as the dish is NOT overcooked. If you like oysters, then you will LOVE a Beef flavored oyster. If you like seasoned BEEF Tallow, you will love this dish! That was, and still is a delicacy in CAJAN culinary delights. If you swallow pork chitterlings, then you can chew on sweetbread! 💯💯💗💗😍😍

Ate that many times as a kid being Portuguese the elders would cook them they give us kids a glass of wine with it we would also eat blood sausage made from hog blood
Down here in South Texas we call them Mojellas, i was taught to cook them low and slow on the bbq pit if there is any chew they need to go back on the pit until fork tender, these are also very popular in Argentina but they prefer lamb sweetbreads

Sweet breads are only big in young bulls, my father used to think they were best before they were a year old. Growing up a custom butchers daughter they were often given to us. We ate a lot of liver and brains too.
Didnt usually eat the pancreas though. I don't know why.

had to watch the video twice. had a nice gentleman inform me one of my yard rabbits was run over this morning while i was watching the first time. left on the nutrition facts and came back on the end of the taste test lol that throat gland looking thing did it have a lot of pinkish orange circles in it?
No it didn’t…… but didn’t seem to be plain fat either.
The thymus gland is in the chest, between the lungs and behind the breastbone or sternum. It is just in front of and above the heart.

The pancreas is Crawfish Melt/Crawfish Bait, which is like eating blood pudding. The brains are white as is in front of you.
You want em you eat em pal and you can have my share too😂 not fussed on the sweetbreads myself but if you like them you like them. It's gotta be way better than Julesild - That's Norwegian pickled herring (I didn't make that up, it's a thing) or Hakarl referred to as fermented shark in English, a national dish of Iceland consisting of Greenland/sleeper shark that has been cured with a particular fermentation process and hung to dry for four to five months. It has a VERY strong ammonia smell and it's not for the faint hearted either but people like them 😂 👍👋

I've eaten sweetbreads multiple times. It was hit or miss. Some was really good and others was rather bland. I would eat it again but wouldn't go out of my way to get it.
