could you also make such a form for a museum project? the model of the later building should be to scale, but the building dates from 1700 so the stones have a dimension that is not compatible with today's stones. we would need several 10 000 bricks but have no experience in such mold making

Not yet but we are considering to produce that kind of mold in the near future.
You can ask how long you need to waint for the bricks to dry?
with a good plaster mix 1 hr minimum
