  • Today, we're kicking off a new series called "The comfort series". I'm going to show you a few of my go to comfort food recipes to make you happy. Let's start this series with this simple and easy recipe "Moroccan Lentil Soup"!!!

    INGREDIENTS:
    250 grams (1 1/4 cups) brown lentils, soaked in water overnight
    1 large onion
    1 large tomato
    3 tablespoons finely chopped parsley
    2 teaspoons paprika
    Salt and pepper, to taste
    3 tablespoons olive oil
    1 liter (4 cups) water
    DIRECTIONS:
    Step 1: Preparing the Ingredients
    1- Soak the lentils in water overnight so they become soft and cook easily. Drain them from the water.
    2- Cut the top of the tomato then cut into quarters. Grate the pulp of the tomato and discard the skin.
    3- Finely chop the parsley.
    4- Peel the onion, cut it in half, and finely chop it.
    Step2: Cooking the lentils
    1- On medium heat, in a large pot, add the olive oil. Once hot, add the chopped onion, grated tomato, and lentils. Mix.
    2- Add the chopped parsley and continue mixing.
    3- Add the spices: paprika, salt, and pepper.
    4- Mix and cook on medium heat for around 10 minutes.
    5- Add boiling water to the lentils, cover the pan, and cook for 30 minutes. Stir from time to time.
    6- After 30 minutes, taste the sauce and adjust the spices accordingly: salt, pepper, and paprika.
    7- Serve hot in a bowl with a piece of bread. Bon Appetit!

    The right way to make lentils, almost exactly like the recipe I uploaded to my UA-cam channel. You have to remember to check the lentils for little rocks. Yes, I go through the lentils and make sure that anything that looks like a little rock gets removed. You can spread a small amount of lentils on a white plate and visually inspect them, and then throw them into a large pot in which you will soak the lentils. Don't forget to change the water before you cook the lentils, there will be a lot of "dust" that has to be removed with the original water that you soaked them in.

      yes, the rocks... LOL. I actually bought my lentils from a store here in Korea (I live in Seoul) -- NO rocks. it's awesome!

    I cooked it in slow cooker and I added some Indian spices turmeric and garam masala and it turned out delicious. I served it hot in the lunch and my mom liked it too much. Thanks.

    I love lentils. In Austria, where I grew up, we eat it with chopped-up pickles (mixed in at the end), and I also like to use some the tasty juice from the pickle car for the cooking liquid. It also goes great with a fried egg on top.

    I will definitely add garlic and cumen into it!;) the way my mom use to make it, and I don't think you necessarily need to soak the lentils over night!. also make sure there's no rocks/debris or sticks in before soakin/cleaning it over and over w abundant water until is clean/clear.. but I still love your way/ it so simple and easy

    This is similar to Greek style. Absolutely delicious! You can also add chopped carrots and potatoes if you like. Goes great with olives,feta cheese and crusty bread and vinegar
    .

    This looks very similar to greek style lentils. Instead of paprika you use bay leaf and a bit of red vinegar. Yumm

      cookingwithalia I made it twice. but with the orange lentils. its delicious. I make it really spicy. BTW found your old recipe with orange lentils. Should make it like that. Thank you.

    A splash of red wine vinegar or balsamic vinegar adds a bit of zest to the soup along side a crusty peasant bread, in winter after any outdoor activity will warm the soul. High in protein, low fat, easy to digest. This is your grandma's food for a low cost meal, peasant food for a peasant people. The height of what comfort food is intended to be.

      cookingwithalia if you think about it the south of Italy was colonized by the Moors. Traditional Sicilian recipes for example use mint and aubergines and almonds a lot. All Italy use legumes too. It's the Mediterranean and we have a lot in common. It's like we are all brothers, I love it!

      I personally like it this way, because I eat it with a spoon :-) but yes, of course, we can add more liquid especially if we are eating it with bread

      Yes it can but red ones are cooked faster than brown ones

    this is not Moroccan lentil soup... it is very thick...
