Thank you so much for this video. I tried smoking some cinnamon shortly after seeing this video when it came out. The smell was fantastic. Tried it in some dishes but they had too much other stuff in them and the smoked cinnamon had no chance to shine. Yesterday I made a carrot salad which was okay until, in a moment of inspiration, I added some smoked cinnamon. The dish came alive. Gorgeous! Looking forward to trying the ice cream some time.
Brilliant. Can’t wait to try! As a side note, i’ve been waiting for months for the sideswiper blade for my kitchen stand mixer because they were sold out. They said they’d be back in the summer. I just want to check again and now they are going out of business and are not getting any more in stock. I’m so sad. 😭😭😭

I'm certain other spices can be smoked, but I haven't tried any others. Yet. Some, as we know from over-toasting, become acrid when they burn. Cardamom is my favorite spice, so there may be some experimentation coming up.
Burnt plant matter has never been shown to be a potential carcinogen. The PAHs and HCAs that form when meats are cooked at high temperature for an extended period of time are being researched for carcinogenic properties. Yes, just understand that the deeper the dish, the higher the smoke sits up away from the cinnamon. So use the SHALLOWEST combination you can come up with.

If you usually buy Saigon, then Ceylon will seem less pungent. If you normally buy "generic" cinnamon, Ceylon should be a refreshing upgrade. It is considered to be the most complex and well-balanced cinnamon, but I prefer the bolder Saigon.

Cardamom was my first thought. I think many/most spices will turn out horribly bitter when burned like this.
