Rocky Road Brownies - Valentine’s Day Dessert - A Chocaholic’s Dream - Wonderful Anytime!

- Rocky Road Brownies
package brownie mix for 9x13” pan
1 cup chopped pecans, optional
3 cups miniature marshmallows, more or less
1/4 cup semisweet chocolate chips
1/3 cup milk
1/2 cup butter
3 3/4 cups powdered sugar
1/2 teaspoon vanilla
Prepare the brownies according to the directions on the box, stirring in the nuts if you are using them
Spoon the batter into a greased pan and bake according to the directions on the box
Remove the brownies from the oven when they are done and immediately completely cover the hot brownies with the miniature marshmallows
In a microwave safe bowl, combine the chocolate chips, milk, and butter. Microwave 30 seconds and stir, repeating until chips and butter are melted and smooth. This will take about one minute total time in the microwave.
Transfer to a mixing bowl. Add powdered sugar and vanilla and beat until smooth. if the frosting is too thick, add a tablespoon of milk at a time until it is just of spreading consistency. Spread over the brownies.
Cool then cut into bars.

As a child of 3 and 4 my maternal grandmother was my daily babysitter. When she baked a cake I was the spoon and bowl licker. I remember one occasion when I told her to leave more batter in the bowl and she stated that a little more had to go into the baking dish. Honestly I think that only half of the batter was in the pan! A wonderful memory of the best grandma in the world!! ❤❤❤ Glad you're enjoying your stay in Florida❤❤❤

Bringing back wonderful memories. Many years ago, a when we were overseas in military service, a woman in our church made very simlar brownies and called them Mississippi Mud.❤
That's what we call them. Mississippi Mud. My grands always expect them when they come to my house.

I made those brownies, I think they were called The Worlds Best Brownie Recipe, & I really believe you are correct! They were delicious & a big hit with my family. I have to try this recipe now.

My friend makes these. She calls them big butt brownies because if you eat too many they make your butt big. She pours a chocolate frosting over the top that has been cooked on the stove top, and that helps also to melt the marshmallows.
I just made quadruple fudge brownies yesterday. Whipped cream made with cocoa powder is always great as a topping. WOW! That is the exact same brownie mix I used. I added cocoa powder to it! I also sprinkled the glass baking dish with cocoa powder after I greased it. That way, the brownies are lined with cocoa on their underside and not strange white flour. LOL
You need a huge glass of milk to go with your brownies.
If you line that pan with parchment paper you can lift the brownies out to cut them. Just to keep from scratching your pan. These sound so delicious. And I have all of these ingredients. That is amazing..,i have made it lots of times but what i do is put the marshmellows on it and put in the oven to melt the marshmellows. When you take out of oven let cool then put the frosting on the melted marshmellows and it’s so yummy and so very sweet that you can’t eat but a small piece. I won a prize at work at our company picnic. Great recipe

This recipe reminds me of my mother's brownie recipe. The term rocky road was not even thought about then. The recipe has to be older than 70 years old because my mother made them when I was a child. Cake mixes was not even thought about then so it is a home made brownie recipe. You put marshmallows on them right out of the oven and you make a frosting and put on the brownies while still hot. While they are still hot I always have to get me a spoon and make sure they are good. LOL Your recipe is easier and I am sure that brownie mix is amazing. That is the best chocolate. I am going to have to try this recipe, mmmm looks so good. After they set up, maybe the next day, put them in the microwave and warm them and put ice cream on top, no more calories will hurt. LOL

Melissa, he really doesn't leave you a whole lot to be licked out of the bowl! 😉🤣 When I make brownies from a boxed mix I like to use milk in place of the water....and butter in place of the oil. To me it just gives the brownies more of a home made taste. 👍

If the oven is still warm you could stick that back in for a minute the make the marshmallows soften better

Looks great! My favorite brownies are semi homemade also. Make a 11x7 preferably or 9x13 pan. Make your favorite brownies, the whe. Out of oven put a 7oz jar of marshmallow cream on top and when begins to melt spread. Cool for bit. Meanwhile in about 2qt pan melt 1 pkg. Semi sweet chocolate chips and 1 cup peanut butter. Add 3 cups rice krispies and stir. Put on top of marshmallow cream. I like to freeze or refrigerate for a bit before cutting.
This looks so yummy. I actually have some of those boxed brownies in my pantry. I have all the ingredients but unfortunately I'm in bed with Covid. This will have to wait till I'm better but it will be the first thing I make. Thanks for the recipe.

Maybe one of the times you are sharing with us, share this information; If you use salted butter you can leave it out, if it is unsalted it must be stored in the refrigerator. I'm definitely one that prefers no nuts in brownies. They're just not meant to be crunchy! Maybe except for the crusty top after they sit for a while. But if I 'had' to use nuts then I'd probably prefer to add honey roasted peanuts and honey roasted cashews. I might even crush them.
I have a box of cheesecake swirl brownie mix! I had two, but made one back on Thanksgiving ('23).

Nothing to do with the recipe but you mentioned a Joyce Hull as well as you being in Florida. We knew Joyce Hull from Florida who passed away within the last 5 years or so and wondered if it was the same lady. She was in her 90s and in her earlier years was a Mathematician, programmer and was quite involved with developing a Brailleing system. The latter was the context within which we knew her. A wonderful person and is missed ... just thought maybe.. Anyway thank you for your videos that I often watch and make delicious use of. I made the Grinch truffles for Christmas.. our grand daughters went bonkers over them :)
