It all started Dec. 22, 2009 when I needed something different for a party and it has been, a freakishly small spoon, the 'ole tapa tapa, the 'ole shaka shaka, and a pinch of cayenne ever since. I tried this recipe, because I'm working my way through a lot of Chef Johns recipes. I like to try them as a first timer l, then post on them. I made this just like he did. I have a small food processor and had to make it in two batches. Also, when it was first done I really didn't care for it. It did taste like skunky beer and cheese. After sitting in the fridge for a day, it was much better. The flavored combined and it tasted like a hearty cheese spread. You can probably identify the beer taste, but it ends up like a peppery after taste and something unidentifiable. I'd make it again and recommend it.

As a true Kentuckian born in Bardstown, I truly want to thank you for spreading (pardon the pun) this regional favorite to the rest of the world. I have my own recipe that I would love to share with you. It's a bit spicier and contains horseradish.

I followed your recipe and made this for my husband who has never tried beer cheese before... I didn't have high hopes that he'd like it... But he LOVED it! Thank you so much for the awesome video! This is going to be our go-to weekend snack :)
Kentucky girl here, love this cheese and, I do eat the celery. Btw you can warm the beer in a pan to speed up the flat process, don't boil it.

I like it this way and I also like it cooked like biscuit gravy. As a Kentuckian from Ashland, I approve this recipe. Pairs well with a soft pretzel or a nice brat

This stuff is a staple in Wisconsin! Then again.. Beer, Cheese, Brats or any combination the three is considered the holy trinity here.

I live in Kentucky, so to get beer cheese like this, I can just go to any grocery store. But this recipe's plenty authentic!

In my part of Ohio we use Swiss cheese. Of course, in my part of Ohio we use Swiss cheese for everything. Try it sometime with even just half smoked Swiss and I think you will be glad you crossed the state line.

Pshh, I'm sure Chef John and I both wish it did! PBR is a very low alcohol beer. You need to drink plenty of them before you really feel any effects.

So, amusingly, those fake beers are built from German recipes for pale blonde pilsners as beer in the US before that was largely British lagers and ales. So... that fake beer is German.

Yes, use a light pilsner. Cheap really is better, and it needs to be flat.

Curious why you use a crappy beer instead of a good one? Wouldn't that improve on the "skunky beer" flavor?
Because we drink crappie beer here. You can use your favorite beer for the cold version, but if you're going to cook it , it's best to use a mild fla ored beer as the cooking will make the flavors overpowering

Outside of the cayenne and hot sauce, this is about dead on the ingredients that Melting Pot uses for their cheddar cheese fondue. Delicious!
Definitely gonna make some of this for my super bowl party. Along with some of those garlic-parm wings. But you know what would go great with those? More wings. Specifically with an awesome home-made honey bbq sauce. If only there were someone who could teach me how to make it...
I'm a Kentuckian; I admit I was sitting here poised and ready to point out every mistake. I'm sorry my faith in your dwindled chef, because you did it pretty much exactly how we do it.
My only suggestions: use a dark beer rather than a light one if you can, and if you're REALLY a Kentuckian you'll use a good KY beer like Kentucky Ale or West Sixth. As much as I love bourbon beers, they're often too strong for this recipe. Try it anyway though; if anything you get to drink the rest of the bourbon beer.

I love how you hand shredded the cheese, into a food processor... Did you lose your shredding attachment?
Mom would slap me for tasting it for seasoning without putting it in the fridge for the night. The first time I made some, I tasted it and it was terrible. I was kind of freaking out and she told me that it had to sit in the fridge overnight. Next day, sure enough, yum!
It is good with cheap beer (I use Hudepohl Delight), but Shiner Bock makes for some out of this world beer cheese.
I haven't had any luck making it with porters or stouts.
My cousin makes some for his restaurant in Indy using Kentucky Bourbon Barrel Ale. It's very different, but delicious on his bacon and beer cheese fries.

I was really expecting this to be a warm cheese spread/sauce. I can't remember if I've ever had it cold, but I would like it with some soft pretzels =D
Chef John, we need to talk about this PBR you are using.
For people concerned about the alcohol, if it's kids you're worried about, considering that it's using a half cup of a weak beer per pound of cheese, your kid would be vomiting up cheese from sheer volume consumed before they felt any alcoholic effects. For pregnant women, just use non-alcoholic beer.
Anyway, I tried this, and added a bit of chopped chives, and it was great. I used a non-dirt cheap beer, a nice nutty ale to complement the cheese, and it was great.

Hrm. I live in Kentucky, and I've never heard of this. Nobody I know has either, I just called like 25 people, lol. My great granny is 101 and she's never heard of it. And there's no such thing as a Kentucky hot sauce. Just like KY was split in the civil war, the kinds of hot and barbecue sauces used in KY vary pretty widely. Usually most people keep a variety on hand from all over the country, because there's no telling what a particular person might want. Plus I live in Bowling Green, where the corvette plant and museum are, so there are always a shitload of tourists from all over the world, let alone the country. Not to mention loads of Asian and Indian foreign exchange students at WKU. No telling who you might end up having over to eat. But generally you're always going to see Frank's Red Hot and Louisiana in everybody's cabinets, you can always count on those being around. And I think almost every house in the country keeps a bottle of sriracha around.

Not very long. It usually gets eaten within 2 days.
In all seriousness, I'd guess 5 or 6 days, maybe longer, but I've never had any stick around that long without getting eaten
