Memorise the 12 keys of an octave to the point that You can hear the correct note just by looking at the keys or piano roll. Onces you can do that, use the same technique to remember cords, eventually after about 6 months, You will start to play without even thinking about it, muscles memory just puts your hands and fingers in the right place.

I’m curious about the treatment of the acoustic piano to get that mellow sound. Also how many pianos/electric pianos do you typically use at once in a track? I hadn’t really considered layering them like that but it sounds good!
Here I’m using the practice felt on my upright piano so there’s essentially a piece of felt between the hammers and strings! I made a video on how I record my upright piano which goes into that in a bit more detail. To answer the second part of your question, it depends on the track. I probably typically use piano or rhodes, then 3-5 synth layers ☺️
