Hey everyone! Here's a quick tip. If you want to add some butter to the meringue frosting add about 3 to 4 tablespoons of unsalted butter slightly softened and at room temp. You can add it right after you make the meringue and mix until thickened. If mixture turns out too runny (after you've added the butter), place into fridge for 15 to 30 minutes, then return bowl back onto mixer and mix on high speed until mixture thickens. Also, if there's any other 0 calorie sweeteners you want to use for this recipe, add amount according to instructions on the package of 0 calorie sweetener on how much to add. Hope this helps. Dee, was the youngest a diabetic before the strokes or developed it during/after the strokes. I am asking this question, because some medications can cause a person to become a diabetic, raise BP, raise cholesterol levels and a host of other problems. I also had 5 strokes, the doctor's never gave me any information on the cause of the strokes and I had never had any major health issues until 2020.
@@zeemc2751 I actually don’t know. It was discovered while he was in the hospital after his first stroke. He has to take medication for it from now on. Sorry you didn’t find out why you had your strokes. My son found out his artery’s were blocked and now he has so many problems. It’s heartbreaking. Hope you are doing ok. It really takes a toll on the body.

As a diabetic myself, I ALWAYS read the nutrition labels. I check the carbs per serving. When I do want something sweet, I generally have to bake it myself. Don’t get me wrong, I do cheat ocassionally. I’m only human. I have a few recipes that I’m partial to. I made a low carb cheesecake and I cam across a low carb carrot cake that I like. Generally, I’ll use almond flour and coconut flour. Of course, nothing is better than flour but you can create very nice baked goods with almond and coconut flours. They just work a little differently than AP or cake flours.

I want to try this, I'm diabetic and love coconut cake. Do you think you can make a diabetic/low carb angel food cake? Allulose I've heard has no bad taste, also I cook and bake with Monkfruit and there is no after taste.
The sweeteners I use are Splenda (sucralose) and Swerve (eyrithritol) which comes in granulated, brown and confectioners options for baking. With the granulated version of Swerve, I suggest it be put in a grinder first. Otherwise, your finished baked goods will have a crunchy or grainy taste. Grinding it a little will give you a finer sweetener, eliminating the crunchy mouth feel.
