by using whats called a "separator symbol". I use this website to find tons of different ones, its a bit of trial and error to find which ones have good natural spacing in discord (which allows you to not input a space character, which in discord creates a - )

I don't suggest that. The discord server will be so disorganized when you add a channel to the catagory. So yeah.

If there's a specific channel you want in a category, but you don't want it to have that categories permissions, you can simply edit that channels specific categories, which will unsync it from the category permissions. Super easy fix.
