You go there to eat food you haven't tried yet to see if you like it before you go to the effort of learning how to cook it. You can even extend the service to selling recipes to those who want to try cooking the new food at home.
Actually, I think that is a. Good business plan here. Extra cooking and prep area would be costly but you could charge a premium for it. I would go there at $50 a plate.

In this universe i could a alien school where Terran chef's teach aliens how to cook and make food/drink items found on Terra. As it could explained away as a cultural exchange program being tested as a future human business model on the planet. For places like the one in the story i could see aliens coming here to try new meals on a regular or for special occasions such as a wedding party brunch or celebrate a job promotion on planet trying a new food/drink item on the menu. I could see a plate being served at 20$+ depending on what the food item is on the plate.

Just need government regulations to prevent paying less than a good wage while allowing the restaurant and employees to profit off of any extra money coming from happy satisfied customers. That said without government involvement being pretty heavy some thing will go wrong if tipping is a thing.

Potentially, but biggest hurdle is to check for combability of food stuffs witch after there issue of allergies etc. This will keep docs busy for years, since no data on long term effects. Then there is practical issues like getting ingredients to alien planet with out them being spoiled unless there is stasis storage or ship jump is pretty much instant, labor, business etc laws of alien planet and long list of things. Pretty sure paper pushing would prevent this kind of experimental restaurant and you would be royally fucked if something happened like mild allergic reaction. People always forget the practical hurdles that come with the territory and why having your own business even in already established set of frame is pain in the ass.
Please, humans, do not introduce the concept of tipping to the rest of the galaxy. It is the employers responsibility to charge enough for the product that the employee is paid well enough that customers don't have to make up for bad business practices and further compensate the employee for the employer being a tightwad.
Western culture has ruined tipping; it was originally used to say thanks for the good service, not to supplement wages. If you enjoyed it and wanted to thank the staff above the meal price then tip, if not then don't. It also existed in other industries, think bellboys and such. I work at a hotel front desk and I get tipped more often than you think; usually its just some change but it still happens.
