I think they have the studio mix playing and they're actually performing the song at the same time and the engineer is mixing between the source and the performance

The crowd was probably allowed in pretty selectively and told to keep it down so they wouldn't interfere with the recording. Most concerts you just sell tickets to whoever wants to buy them and tell everyone to have fun
