    Keep mushrooms in a paper bag and if you don't use fast enough, they'll just dry naturally instead of rotting. You can moisten to use them, grind them. I save all the dry stems for soup stock and gravy.

    Many years ago, I read a book by a couple, who were medical doctors and also Type 2 diabetics. In their book, they talked about consuming sweeteners, and how the tongue tastes the sweetener, gives the message to the brain, and the brain gives the message to the pancreas to then release insulin into the bloodstream. According to their research, as far as insulin production is concerned, the tongue-brain connection did not diffenrentiate between different sweeteners. Their recommendation was, therefore, to adapt your tastebuds to less sweet foods, in general, as to reduce insulin triggers. As far as salt is concerned, I keep Himalayan rock salt in large chunks in a jar of filtered water. The saline solution I use for seasoning food. I also take a tablespoon of that solution and drink it in the morning, mixed into a glass of water. When I do this, it feels as if my body wakes up and is more alive. I can`t quite describe it.

    Have been vegan for nearly 2 years (27 years a vegetarian) and am contemplating keto. Not many vegan keto experts to learn from. I love your channel and am definitely a Fan fan!

    I did research some years ago and was told to store produce the way they do at the store: fresh veggies fridge. Avocado, potatoes, onions, tomatoes on counter. Personal preference of course., just wanted to share. Thanks for your videos! I learn so much

    Natvia is mostly Erythritol (its misleading labelling - says made 'with' Stevia) which may not be safe indeed may well be quite dangerous- and a lot of people including myself have problems digesting it

    Hi Fan! I cook with water or broth, then let my food cool. Then I add my olive oil. This way, its fragile components stay preserved. 🙂🫒

    For cooking you can use olive oil and coconut oil mix. The coconut oil prevent the olive oil
    From burning and it add great flavor.

    Great 101 video for the best kitchen staples to get you started!
    Search out the MONK FRUIT!!!!!!! It tastes sooo much better than Stevia IMO. Avoid the sweeteners with maltodextrin or any dextrin ingredient, it spikes your insulin worse than sugar!
    I also always keep flax seed oil because of the great high omega-3 content. It becomes a bit difficult to keep your omega-3 to omega-6 ratio in check while on keto, so using flax seed oil and flax milk is very helpful for this.
    Coconut butter/manna is really great too because of it's natural sweetness. I also got tandori paste to replace my curry paste. Having some coconut flour and almond flour is really great to help you bake things while transitioning Or when you would like something different.
    I also do keep some iodized salt in my kitchen, I mostly use celtic sea salt and other salts, but I do often use iodized sea salt to ensure I am getting enough iodine. I have found often that while on keto I have a hard time keeping my iodine up and iodized salt is great for that. There are other ways, but iodized salt is the cheapest way. Kelp flakes and other seaweeds are good. But their levels of iodine are not stable and can get quite expensive.
    I also found the salt was not enough to keep my electrolytes up while on keto, so I have purchased two different kinds of supplements to keep it up. I got them both on amazon, and I don't think they taste very great. But once I finally got it, they literally felt like they were saving my life. Hydrolyte from MMA Nutrition (which also has l-lysine in it which is found in tea and is very relaxing), Vega Sport Electrolyte Hydrator is another good one. I also got a bottle of liquid potassium, because it is an important electrolyte that I found is also VERY difficult to get on keto. You could also get a bottle of Trace Minerals and bottle of liquid potassium and keep your salt intake up. The trace minerals has mostly magnesium in it. Epsom salt baths are also a great way to get magnesium without ingesting it through your stomach. I have found having these supplements have save me from feeling like complete garbage on keto. Just taking a s**t ton of salt was not enough for me, I need the supplements and they really saved me life on keto. Lite salt is pretty good for potassium and iodine as well, though you may want to avoid due to the processing involved.

      Almond is HIGH OXALATES, if one is the 10% of humans who form kidney stones avoid almond!

    I've been doing raw vegan but not seeing the results that I want to and I think it's just for me, way too high in carbs/natural sugars. I'm going to give the vegan keto a go and see if I feel better and lose my belly fat. Starting tomorrow!

      Thank you so much. Keto alone would slim you down but it won't build muscles for you. However, it has greatly enhanced my ability to do more physical training (being able to workout extensively in fasted state etc) Nothing else I have tried diet-wise has produced this kind of effect.

    Can you please show all types of flour you use in bread, cakes and pasta? I just get Hump flour is it Keto friendly? I can’t tolerate nuts. and lactose intolerant. Iam from Middle East love bread and rice it our 100% daily meals, if I master making keto bread and Iraqi Dolma dish I am good. ❤️ Thanks in advance

    i'm hooked on liquid coconut oil. it has no coconut flavor at all. and i can eat tons of fried food and have no issues. i can't eat any fried food if it's not fried with liquid coconut oil. wish it wasn't as expensive though

      The downside is that you can only use it for low temp cooking otherwise you will damage the fat - taking away the health properties

    I have a question: I started keto recently and developed the so-called "keto rash". Have you had a problem with that when you started keto? I have read some articles/comments and they said it's good to increase your net carbs. May be you have some advice or heard something about that? I'm quite insecure on how to go on. I do intermittent fasting, too. It works very well for me. But I wanted to switch to keto, too. May be you have an idea (any idea)? Best wishes and please keep sharing your great videos - I really love them :)

      I'm aware of "keto flu" but haven't heard of keto rash. I wonder why going low carb would cause allergy. I hope it goes away soon. Going on keto should make fasting easier for you. I fast from 14-22hrs most days and it's quite effortless. Thank you for your support x

    Thanks so much for your videos. I'm 81 yrs old and have only just begun thinking about a keto diet, having been 'almost vegan' for over 30 years. If I do decide to go keto I think I can probably adjust to stevia instead of sugar, and I could cut down (but not out) on chick peas. NB I've just found a lupini bean recipe for hommus but haven't tried it yet: ua-cam.com/video/M0hIKa7CHJM/v-deo.html .
    But I'm pretty sure I'll be craving bananas, which I now have pretty much daily and are apparently the worst fruit in terms of a keto diet. So I'd really like some ideas for a simple substitute if there is such a thing. :-)

      Seaweeds are also high in iodine. I believe she eats quite a bit of that. You don't need iodized salt if you consume seaweeds regularly. 🙂

    Hold up! Seed oils are toxic pufas. And olive oil isn’t a high heat oil. And too much oil clogs the liver. Your food look delicious, but just can’t do all the oil.
