Hmm, maybe rather than "(Peter Jackson) didn't like DelToro's vision" he just had his own concept, as it is very hard to build on someone else's designs, that was not even fully developed. "Two movies seamed incomplete" ; as the ancient Romans used to say: "Omne trinum perfectum"= "Anything triple is perfect". There is a set on YT of "Making of" about making "The Hobbit", and it explains at least a little bit why they did what they did with directing the movie. With all faults of "The Hobbit" in mind- I still like this movie, it just has something captivating...
I enjoyed the Hobbit trilogy. It was not as good as LOTR. The scenes where characters were falling and surviving unscathed felt more like watching video game graphics. In those scenes there was too much defying the laws of gravity to be believable. That was my main criticism of this trilogy. However, I enjoyed watching Martin Freeman as Bilbo. I felt that he had captured the essence of that character. His riddle scenes with Gollum were enjoyable to watch and of course his strained relations with the dwarves were good too. My favorite part of the trilogy was Smaug. Those were the best scenes of the whole trilogy. I felt that Jackson was trying to link the Hobbit with LOTR. Storywise it is linked via Sauron's ring. Not sure if Tolkein intended that link when he originally wrote the Hobbit. I felt that Jackson did a good job linking the Hobbit with LOTR. Tolkein had a lot of footnotes in LOTR that helped with the backstory.
