This is exactly how my Grandma cooked speckled trout that my Grandpa brought in off the pond on PEI, except she used bacon-fat. This video took me back to my youth. . . .I really enjoyed it.

The wananish are actually landlocked Atlantic salmon, the trout you should be going after are brookies up in your neck of the woods! They’re a delicacy, and Newfound Land is a hotspot for brookies

I married me a Newfoundlander (now living here), so sitting here, on a beautiful sunny afternoon , figuring out how to cook up the trout buddy dropped to us the other day....came across you gals- nice video :)...I'll be serving with a fresh spinach salad from the garden, as well as a few fresh herbs :)
Nice! I'm so glad to help and how wonderful to have a friend drop of some trout. My sister Pauline is the fisher woman in our family she goes in trouting all the time. Adding a few herbs will add extra flavour to your trout but good ole salt and pepper is more then enough. @@bonitaskitchen it sure was nice to have such beauties dropped off- I did end up just using salt and pepper, as I didn't want too many flavours going on the plate (the salad had spinach, bacon bits, egg, apple, raisins, onion, poppyseed dressing- so lots going on there). We used the bacon grease for frying as we were out of fat pork- it all was amazing!!!!!! I definitely will be checking out more videos :) Have a great day!

Beautiful trout. I was surprised that Chef Pauline did not scrap the scales off the fish when she cleaned the fish. You also had a light flour coating on the fish instead of a thick batter. How do you keep the scales on the fish from curling up and getting in the way when serving and eating the fish?
Thank you Lurie, I'm so glad you enjoyed our video here today, these are very small trout that don't have big lot of scales on them. Washing is a little cold water and pat dry is all you need to do really with any small trout/fish and no batter is needed only to roll in some flour of choice with a little salt and pepper to treat. The skin you don't eat anyway its just to have the beautiful look and the favour just taste so nice. I hope this helps and thank you for enjoying our video and recipe. :) Bonita

I don’t like this method of cooking trout. I don’t eat the skin. When you batter the outside and fry it’s pretty much pointless. If I’m going to fry it I’ll have them cut into fillets. If I bake it in the oven I keep it all together like you guys did on the pan.
Thank you Tyson for your message, these little trout would just fall apart if you didn't coat them with flour. We don't eat the skin of a trout or fish but having that crispy skin with the taste of sea salt and pepper on them its so delicious and the inside is moist and the fish flakes apart. Baking them in the oven would make them dry and the flour won't be toasted. We got these fresh from the pond to the pan, how wonderful was that, what a lovely day we had and nice having my sister join me on the show and catching trout. Bonita's Kitchen I wouldn’t put a trout in the oven with batter on it lol and no it doesn’t come out dry when cooked in the oven. When pan frying a trout, I always fillet it, as I like eating the crispy batter. I live on a lake full of rainbow trout. I cook them a lot and when I fry a whole small trout I don’t need to batter them and they don’t fall apart. But it’s ok I still liked the vid.

@@ejr5480 We don't debone trout here in Newfoundland because they are only small little fish, if I was working with a cod fish or white fish, salmon something like that we would debone. Sorry about misunderstanding your message. I will do a video showing you how to debone a fish over these next few months. I hope that helps. Bonita

I do love all types of seasoning but not on pan fried pond trout, or cod, thats just sea salt and pepper. Bonita's Kitchen you should try fly fishing. I find it’s a more exciting way to fish for trout.
