    I am a retired teacher. The best teachers are not afraid to say they were wrong, to apologize, or to provide explicit REinstruction when needed. You are obviously a very good teacher and admirable.

    My daughter’s MIL gave them 2 big boxes of items she canned. She accepted them and thanked her for her generosity. Then the next time I came over she asked me to go through safe canning practices and point out the items they should not eat. There were jars of unpeeled potatoes, dry canned potatoes, ham, dairy products and smoked ham. She explained it all to her husband and they decided not to eat any of it because they were just so unsure about how things were processed. At least I kept my family safe.

    Growing up in Australia, canning anything other than fruit, and jams etc was unheard of. I have learned everything I know about canning from books, and people like you on UA-cam. It’s terrifying being a beginner , and only having the so called ‘experts’ on UA-cam to learn from, I trusted what these people were telling me as I just knew no different. I did my own research about botulism, prior to canning anything , and , having a nursing background , decided myself that these ‘rebel’ canning methods were unsafe. It got to the point that, I had a brand new pressure canner, sitting on my shelf for two years , and was too frightened to use it. …… I then found you Leisa, And you , and only two other UA-camrs, gave me the knowledge and confidence to start canning safely !!! I applaud you for you’re honesty… you are correct when you say when we know better we do better. Thank you for everything Leisa

      Another nurse here. We share the germaphobic gene, lol! I watched that pressure canner like a hawk at first, but now I have the radar ears for the jiggler. And I now love canning. And I actually eat what I’ve canned.😊

      @@leazzel7 we have the ‘Fowlers Vacola’ method which is Australian, and been around for over 100 years, but, all ‘canning’ information, we follow, is from America.

      @@leazzel7 Yes, but they call it bottling, not canning. Every country has its own way to do things. Most still water bath can everything, including meats.

    I had no idea how many people rebel can until I started canning. It’s one reason I won’t eat other peoples canned food unless I know their practices.

      Omg a friend was telling me about his practices and “experiments” regarding canning and how as long as the jar seals the meat will be good.

    Being so real and honest is exactly why I watch your channel!!! It scared the bejeebers out of me seeing all those rebel canners and knowing newbies were trying to learn from them!!! Ive been canning for 40+ years and was appalled at what I eas seeing!!! I ask some silly questions sometimes just do others will see that you cant can them!!! Thank yiu from the bottom of my heart for teaching safe canning methods and Im canning more again since watching yiur channel...Im almost 70 and physically disabled so I'm very limited what I can do anymore cuz I cant stand up long enough!!! Thanks again and Brightest Blessings 💜

And also why you were comfortable with doing it. I canned corned beef. I will continue to eat that corned beef and will continue to can it. I absolutely love it.

    Don't beat yourself up, there is not a person among us who have not made a mistake. It is a learning curve. I have been watching you for quite a while now but I am new to canning and I am so very grateful that I have an experienced person to ask questions and know that I am going to get a safe answer. You are awesome and don't let anyone else tell you different. You just keep doing what you do and thank you so much for all of the information that you work so hard to get to us.

    I’m so happy to hear you talk about this. I started canning over 40 years ago. My mother in law taught me. Yep, back in the old days I hot packed some call it open kettled. Fortunately over the years I updated my canning books to keep up to date with new canning methods. My Presto canner is over 40 years old as are many of my tools, but this old lady is up to date on all the updated rules of canning.

    You can can beef brisket. There is a recipe in the Ball Book for Chipotle beef which uses beef brisket which is awesome.

    I very much appreciate your honesty. Yes, when we know better we do better! I just completed a master food preserver course here in CA. What we have been instructed to do when some thing is not approved is to state what you said- this isn’t approved and why. To educate them on the science. We are advised to tell the client that we cannot tell them what to do in their own kitchen but rather educate them on the limits of what we can recommend and they have to make the informed choice.

      I became a Master Food Preserver in 1984 , still have my big binder Modesto, Calif. I am sure lots have changed since then !!!

    Thank you for being you! I’ve only been canning for a few years and had followed someone else & canned dry beans. You told me they were not an approved method so I threw them out! I’ve since been extremely careful about who I follow and check with YOU! Thank you again!

    Much respect for taking a stand on this. I learned how to can from my Mother. She did not own a pressure canner. I learned the how-to for canning green beans, sausage patties, corn & more. Will I teach others how she did it? Absolutely not! She knew exactly what to do before, during and after canning to keep her family as safe as she could. We were fortunate that was enough. Others were not so fortunate.

    Because of your integrity, I always refer new people to your your tube channel. Unfortunately there are just too many people that you can't convince. After becoming a MFSA I won't eat anyone's canned products unless I know they have done it correctly. Thank you Leisa!!!!!!!!!!!❤❤❤❤🥰🥰🥰

    I was one of the ones who did listen to you. I wanted to can some corned beef, so I watched your video. When you said it wasn't approved, I did my own investigating and sure enough-nope. No corned beef for us. Thank you so much for being honest and open. I'm not brave enough to be a rebel.

    Here's my 2¢ worth. Even the very best teachers learn new things. Don't beat yourself up for what you thought was correct way back when. We all learn continuously, methods change, opinions change. You do the best you can with the knowledge you have at any given time. You were honest in saying it was not an approved method, I do recall you stating that.
    I too have corned beef on my shelves, I will use it to make corned beef hash. I may or may not do more. This is a new to me thing I haven't tried before and I only did a very small batch to see if we even like it.
    I appreciate your sincere efforts on our part as your audience to keep us safe. You are absolutely correct in saying some people only hear what they want to hear. You are not responsible for others selective hearing. Keep doing what you do so well.
    As a side note, I hear you on that 4 oz stomach business, me too. A huge life improvement for me.

    I watched your corned beef video and I knew it was not an tested (approved) method but chose to can it anyway. We have eaten probably a dozen jars. Probably still have a dozen. Will continue to can it. I cut mine in small one inch chunks and can in wide mouth pints.
    You are a super great teacher! You don’t owe us an apology. You stated up front it was rebel canning.

    When I was a kid in the 60's I helped by snapping the green beans before they were canned - in quarts, in a water bath for many hours. I'm so glad no one ever got sick. When I began canning I learned a whole lot before I started and never canned low acid foods until I got a pressure canner. These days ugly meat is my favorite, thank you Leisa!

      ​@rayf6126 You have Hot Water bath usually for vegetables and fruits and pressure canning for high density vegetables and certain meats.

    I appreciate this video Leisa. I remember the videos, however, I DID pay attention when you said it was rebel canning- so for me, I wasn’t interested. I’ve been on your channel during the canning raw bacon days and no soak beans. You’re a responsible food preservationist and now, care enough for others to make better, informed decisions. I appreciate that!

    The very first thing I pressure canned was pinto beans. I follwed the instructions in the Presto canner instruction booklet and put them on my shelf. Later I did more but by then I had the USDA canning booklet and it had different instructions. I was terrified to eat the first ones I preserved because of that. I did eat them and they were fine, but I made sure I follwed the USDA guidelines from then because the processing time was longer which I felt was safer all around.

    I'm so glad you addressed the rebel canner issue. I've seen some appalling videos out there. The worst part for me is that some of them know better and still defend the incorrect way. (shudder) Thanks for being level-headed and for correcting your own errors!

    You are first person I remember hearing talk about safe/approved methods. That made me do some research- THANK YOU!
    Learned to can as a teen in ‘70’s; I did follow recipes in canning book, but now know lots of other things done were not right:
    - used mayonnaise jars
    - left rings on in storage
    - stacked jars in storage
    - used paraffin on jelly
    - no AC where stored (AR heat & humidity)

    Leisa, you are a wonderful teacher and 100% transparent!. Teaching the approved methods only is good, particularly for people who don’t want to sort out variables on their own. Some may come from families that have a history and documented processes on doing things in a different way and they can use those method if they desire. This all comes down to self reliance, self sufficiency and self responsibility. I can’t tell you how much I value all the information you share, your honesty, your integrity and your humor!     You go, Lisa! You're absolutely correct. I have been canning since 2020. I know enough about canning according to my caners' directions, and I double check the National Center for Food Preservation. I don't venture off the beaten path on this. I don't need to. I can mostly proteins, and occasionally , water bath can pickles or jam. That's it, that's all I need. I don't have a garden, so canning vegetables is not economical for us. I can still buy canned vegetables cheaper, or get them fresh or frozen. I don't want to can a bunch of soups or stews or other recipes when I can just open the cans and mix and match as I feel like it. I like to keep it very simple as I am still working.

    One thing I greatly appreciate about your canning videos is that you explain the SCIENCE behind why something is safe or not. Understanding things like density or how liquid is used to transfer heat makes me much more knowledgeable about SAFE canning.

    LISA, YOU NAILED IT!!! You never just believe whats on line! You gotta do it right! Non acid foods, PRESSURE CAN, acid foods water bath! Your local extension office is ur first step on when to can what and how!
    I need to know how to corn beef, never did it before, i have the stuff to do it, but I have pin feathers cuz I truly dont know WHICH process to use! I want to corn the beef, but how to store it has been my stop sign! I DO trust you Lisa and theres one science based method that's been done but I'm STILL unsure! I know corned beef in the can is not done in chunks like you'd can regular beef...I'm thinking maybe its best to cut it up WELL to even can it, but still I'm gonna process it longer in the pressure cooker I think, I'd NEVER oven can or risk my family's life by rebel canning! I DO plan to try canning some, but the process I'll use I'm STILL not sure!

    Leisa, You have made your point clear as a new pane of glass. Thank you for your honesty and forthcoming! I consider myself a newbie at canning and have been canning for 2 years. You have been my inspiration on many occasions. When I prepare to can (whatever) I research several sources before I proceed. Here in this area of rural Georgia canning has been practiced since the days of Moses parting the waters.... I can't tell you how many times I've heard "my grandma did it like this 80 years ago". I always politely decline any offer of taking home a jar. In addition what is shocking to me is the recent appearance of roque canners promoting non-approved practices, under the guise of "prepping" that are posting some of the MOST DANGEROUS methods of canning, all the while stressing that Armageddon is coming and you MUST "do this NOW" attitude. All the while leading the scared uneducated novice down a path to destruction.

    For the past 40 years I've used the Corned Beef method from my Kerr Canning Book. This recipe shows how to corn plus how to can. I've been comfortable using the Kerr (Ball) procedures.

      I don't dry can, oven can, etc. I pretty much use my Kerr and Ball books.

    If you had consulted your crystal ball, you could have seen into the future and been able to KNOW that canning corned beef was not an approved recipe. Now that you KNOW better, you can move forward to DO better! Some people will follow your lead and learn the correct process, but there will always be those who will continue to do things their own way, no matter what, and you can't control that.

    I saw your older videos and you always stated that this was not an approved method and once you said that i made the decision not to can. But you have taught me so many correct ways to can that i am happy to watch and learn from you. At least you are honest enough to admit and apologize.     I'm new to your channel and have not yet attempted canning. As someone who is willing to learn, I want to onlh learn the safe/approved way of any food preservation method.     You were always clear about approved or not in those old videos.! I’m glad you take these issues “head~ on” and that way people can learn from you. We are continually learning new information especially from a scientific perspective. So it makes sense that the message changes over time. Just look at the new headspace for the chicken breast to can now! Thank you for all you do for us!❤

    Thank you Leisa for sharing your canning journey and canning safely. I have been watching your Canuary Collaboration for several years now. One suggestion is that in choosing presenters for your collaboration make sure they agree on not rebel canning. For example your last collaboration you had someone showing us how to can beans dry and not soaking or quick method. For new canners they would think it’s okay since Leisa put the collaboration together. Just a thought. PS love your honesty and keeping us safe ❤️

    I have corned my own beef the way your video said and I have canned it. I am glad that you put this video out for beginner's. My great great aunt and great great grand mother corned and canned their own meat-and NOT by pressure canning. I heard you say it is NOT approved and I made MY own choice to do so. I will continue to do so just as I wrote down based on the way I have done it the last 2-3 years ago.

    Leisa, I always appreciate your honesty. I've been following you for 4 years. You've ALWAYS stated whether it was approved or not. Go easy on yourself. We're ALL still learning, and we all make our own decisions. I still add a smidge of water to my ugly chicken because, 4 years ago, it was approved. Now, they've changed their minds. I still have great results. I don't care for corned beef, so it isn't an issue for me. But, you've cleared it up for those who do. Let's keep going. Don't hammer yourself! There are too many ppl in youtube land who are doing CRAZY rebel canning. That crap doesn't even make sense. Big Hugs to you!!

    You have the integrity that so many of the You tube canners do not and I've recommended you to several new canners. I KNOWINGLY rebel canned 18 pints of corned beef after St. Patrick's day this year and we're eating it unless a seal breaks. I won't can anymore of it though.

    Thanks for this video. I am working through the corned beef that I did 2 years ago from your video. Once it's gone, never again. It is good but I don't want to risk it again.
    I see some crazy things being canned. One person cans macaroni and cheese for her grandson's daycare 😮. Not only risking her family but other families as well 😢. And those families have no idea 😞.

    I started WB canning at the onset of Covid. I know my jams and jellies are safe as I followed the instructions in the pectin box. However, I started pressure canning shortly after but before I found this marvellous group. As I sorted my jars as we are moving this week, I threw out an obscene amount of jars because I am not confident that they are safe. Live and learn.

    I remember that video where you made and canned corn beef. You were clear. I have not pressure canned yet but when I do I will come here because you so clean on instructions and where to go to find the recipe. I also come here for any canning because I know you are up to date on the correct information. Like that those electric pressure canners are not approved. And there are so many channels promoting that electric canner without saying it is not approved. Thank you for being so clear and open about canning

    I've can corned beef and have just finished eating my 2022 jars. Like everything, I go through the saftey test. Proper seal, smell when first open and smell when cooking. And of course how it looks.This goes along with other meats as well. I try to eat them within 2 yrs. I always take a bit 30mins. or longer before giving to others. Figure thats time to let me know if something is wrong. Thank you for this video. We all MUST be responsible for what we feed our loved ones. There are do overs and things I will not do again. I do ✂️ my corned beef thin when canning.

    Lisa I've watched you a long time and you've always told people when something isn't approved so never be sorry. People need to use their own heads and if anyone gets sick it falls on them. People are responsible for themselves and your videos are very good.

    I have always appreciated the way you teach people how to can and how honest you are. You shouldn't need to apologies, when we know better we do better! Now if you had re-canned cheese sauce in mayo jars in the oven I think a different conversation would be happening. I only follow approved methods, really don't want to get sick from food. I have a recipe for jam from a great grandmother who goes in to depths on how to put the candle wax on top - ok - the jam part is good, but I am not putting candle wax on top it - I have the instructions if that becomes useful but there will be a learning curve as I never tested. But thanks to you chicken can always be on the menu. Love you, Take Good Care 🥂

    As a newbie canner, I appreciate your videos. I appreciate the fact that you want us to learn the right way. That's what I am personally looking for. This can be very confusing for those of us just starting out and I have run across videos showing how to do certain things that just make me go...hmmmm. But honestly, I'm new so I don't know what I don't know. I have narrowed my youtube instructors to 2 or 3 that I feel I can trust. You are one of those. I like your style and delivery. I now also like that you can own up to a past mistake. Thank you for helping those of us that are trying to get pantry prepared.

    I remember canning corned beef after watching that video. I haven't done it since, mainly because I didn't care for the taste, so after I finished the batch, I never repeated it. I also used to can beans using the no-soak method. That said, I'd like to start hosting my family for dinners once my kitchen gets remodeled, so I feel that sticking to only approved methods is the best route.

    I do have to comment about your recipe to make corned beef from plain beef. I tried 4 different recipes and yours was hands down the BEST! I now make corn beef and keep at least 5 uncooked in the freezer, we love it. ❤

    When I got my pressure canner I was terrified I was going to make us sick or worse.
    It’s almost like you were here with me as I learned to use my pressure canner. I started with the ugly chicken and pepperonis pork.

    This video just proves how awesome you are Leisa. I appreciate the guidance and transparency. I did see some of the old videos and tried some of them. We don't like corned beef so never did that one. You did encourage us to do the research and you said it was not approved. "You do you". If you say something like that then I don't do it.
