I’d like to see a video on how to properly interrupt a talking customer. I work at a restaurant bar and there’s been too many times I can’t get away from someone telling a story and I have to make drinks for the tickets coming in for the rest of the restaurant
Oooh that is a tricky one. A great question, it's just a hard one to put in video form because every interaction is different. I think the best thing I can tell you is that mentally you have to have the mindset that you are at work, your work obligations come first ultimately, and if you have given a guest everything they need from a service perspective (ie silverware, napkins, they're drinks are full, etc) then you are not required to stand around for story time. Don't over think it. To actually pull it off, put a big smile on your face and in the sweetest voice simply say "I hate to interrupt you, but give me one second." do what you gotta do and then when you can, and only when you can, come back and say "sorry about that, what were you saying?" so they know u care about the story. You will realize when they are ready to order when they stop talking and grab the menu, that’s your cue to approach the table. I get comments like “I am sorry we talk too much” “ I am sorry we have not seen in a long time”.People do realize that you were waiting for their conversation to finish to approach the table and from there it is just smooth sailing .

I’ve been serving for 3monthsish and am like 75% introvert 25%extravert and can chat when I’m feeling it but these tips are actually so dope and After watching your video I’m actually excited for my next shift to try and make connections w guests. I’ve been going through the motions and I’ll make a connection here and there but for the most part it’s just taking the order. Been watching alot of videos from your channel on the bartending basics and i help back of house a lot and know what’s poppin back there for the most part as well but you’ve inspired me to just learn about the rest of the restaurant as a “whole” and just be educated and know what’s going on and now I just want to up my product knowledge and go from I’m here to get by to working professional so thank you! Hey Keara, thank you so much for the compliment. I really wish I had some videos at full speed. The bar that I have set up in my videos is actually one that I created in my apartment living room! lol. So it's not a fully functioning bar. That makes it hard to make more than a couple of drinks at a time. To really show full speed, id need to be able to make more like 5-10 different types of drinks. Hey Delilah grrrrl! Lol I love comments like yours. I started bartending at 19 and I think bartending is a great way for young females to be independent and employed. You can not serve alcohol in most states until you are 18. So in the meantime, I would look for barista and cafe jobs that can help you get your foot in the door to the food service/ hospitality industry. Then when you turn 18 take an affordable bartending class. Those two steps plus watching my videos will make you totally ready to move into server/ bartender jobs before you know it. That is a great question Arlene and unfortunately is one of the hardest situations to be in. Cutting people off should be something your managers and your owners have your back on as long as you are making a reasonable assessment that someone has either 1) had too much to drink or 2) behaved inappropriately. If you are in a situation where you might lose your job if you challenge the boss then the only thing you can do is let the boss know that someone needs to be cut off and move on with the shift. Once you have informed a superior, the decision to do nothing technically falls on them. But to back yourself, I would tell other staff or make a written note of the incident as well so everyone knows that you TRIED to cut the person off (i used to keep a mini note pad in my bar bag for stuff like that but nowadays a note on your cell phone would do). If it is an ongoing situation, I would consider discussing the situation with a higher up supervisor or owner if you can. Hope that helps!

Whenever guests start doing things like forgetting their order, ordering shots/ drinks for other people (especially people they don't know or aren't with), or asking if they paid already, or trying to pay cash for rounds when they have a tab going, I start giving them updates on their tab."Hey, you have a tab open and it's at $100, do you want to keep it going?" It helps to break up the night and create memories that help them recall why their bill got so high. But if it's too late for that, most POS systems can help you out. On the older ones like Aloha and Micros there is usually a setting that will rearrange the bill by time ordered and, as in the case with Aloha, will actually include the exact time that drink was rung in. You can print this version and show it to the guest. On newer cloud-based systems like Breadcrumb and Toast, it's a report that you can pull up and print. You might need a manager code to access the time stamp on either system, so grab one and have them pull it up for you. But the most important thing to do in this situation is to stay super confident and absolutely sure of yourself. Don't take the bill away. Don't look it over like you're not sure what's on it. If you hesitate like "oh wait, hmmm did you order that? Maybe ...." they will run with that and will insist that something is wrong and there's no going back. Instead hit them hard with the "These are exactly the drinks you ordered. When you first arrived, you started your tab and ordered two vodka sodas for your friends and a beer for yourself. About 30 mins later you asked to see a menu and ordered tacos, a beer and three shots. You went to the bathroom and came back and got another round. Remember you made that joke about how dirty the bathroom is? Then you started talking to those girls and bought them and yourself shots. Then they left and you sent a drink to the girl at the end of the bar. Etc Etc" When you give someone a matter of fact rundown of their night, no interruption, no hesitation, they usually realize that you know exactly what has been ordered, when and why and they're the ones that lost track. they usually quit the argument right there and you don't even need to get the time stamp report. But if it continues, call a manager and use the time stamp report to back yourself. up. Hope that helps and thanks for watching!!

Alley I so love your channel and your voice so calm and peaceful. Yes. I drink it up like a boss and I love to go to the bar. My job is that of a working pianist so I can probably assure you that i love drinking cause i am a pianist. I am the life of the party but respectful when I am drinking. I also am totally blind and ride the bus everywhere I go so I have the blessing of being able to drink as much as i want and get on the bus and not having to worry about getting behind the wheel. That is a totally god send blessing. I am so funny at the end of the night after drinking but maintain that respect for everyone in the bar. Never have i had any problem with sexual groping and freely touching girls or non of that. Never ever as long as i have been to the bar and drinking. I mean I can drink my ass off all day and still maintain that respect and love for people. Anyways that is like this. When I am at the bar and many people don’t realize this but the best thing to do as a patron at a bar is to sit there quietly and smile. That is what i do. Never shout or yell your bartender’s name and say “hy!!!! Get me a drink miss bartender!!!” Never ever ever as a patron whistle or bang your silverware on the table. You can sit there all night and the bartenders will love you if you just keep quiet and drink and have fun. Even after the alcohol gets to my head I still maintain that respect cause I know what i am doing and how i should act. A lot of people will whistle or bang the table or call the bartender and that is not going to make them come faster. What i do is sit their with my hands in my lap after a drink, maybe give a quick and i mean Quick Look over at the bartender if i know they are their and smile and then turn my head facing forward. Sitting there quietly and patiently with my napkin in my lap and hands in my lap. The bartender will appreciate that. The same thing is when I am riding the bus. There is a way to ride. Many passengers on buses will automatically say the bus driver is rude. Think of the bus driver as your bartender. Kind of crazy idea right but where i am going with this. They have a job to do. Hauling you around the city transporting you after a night of drinking if you are responsible don’t start making conversations with the driver. Let them take the lead. Most people think the driver is rude but they are not rude they are only doing their job and some bus drivers don’t want to talk. They just want to transport and keep their eyes on the road where as others will keep you awake by talking with you. The bartender is there to take care of you during the night so yo hare safe and having fun. So rules apply. With the bus driver let them start the conversing. Bus drivers are super good at starting conversations. You as a passenger follow the lead. With the bartender though if you are wanting your bartender just sit there and wait and smile. They are there they will see you. And then everyone will bee happy. Your night will end greatly not a night in some stupid drunken tirade. Hahahahaha. Then the bartender will smile at you next time you come in cause they know how you were the last time. If everyone did this bartenders would bee so happy with everyone and I am sure that you all would bee soooo happy to serve them. But there are elicits that you have at the bar and riding the bus. With the bus driver you never want to start talking with them. Let them start. After all. They are in the front of the bus driving so that means they are in the lead. Let them say something first before you talk. This is coming from a person who has taken buses all their life and still to this day. At the bar as a patron always remember to all my fellow patrons never yell or shout at the bartenders. Listen and sit there quietly and engage in conversing with other patrons at the bar. Never raise and call your bartender over to you. Raising your nad and shouting and snapping your fingers is gonna get you missed and they won’t want to serve you. Just smile turn your head and smile and then quickly take your head and keep looking on forward. Bartenders will love you for this and this is coming from a bar patron. I also let the bartender take me out of the bar at the end of the night to assist in catching buses. Making sure I get home safely after a great night laughing it up and having fun. You will as well as your bartenders will want to remember the drunken nights you had if you are respectful and happy. But going to a bar cause you had a pissed off day and drinking so you can fight? Well, then just don’t drink if you are going to do that. You are suppose to go and have a great time and bee happy not fight your but off and yell cause you had a piss ass day that really nobody wants to hear about. That will just get you kicked out. Try not as a patron to bring your problems to the bar. Leave that for another day. Drink and have fun and laugh a little and get loose but fighting and assault and stuff that iwll get you arrested at the end of the night is. Absolutely not the way to go. And if you do end up getting sick throwing up, what ever you do try. And try and wait till you get home. Don’t throw up all over the bar. That is nasty and the bartender really doesn’t want to have to clean up your mess… it does happen. R i have had that happen. But with me if I did that for example which i did the other day when I came back I got sick at home not at the bar. I proceeded to eat more when i got home and had a coffee and I got sick after that. Hahaha. But not at the bar. That happened at home. And then when you get home just go to bed and sleep it off letting all the alcohol come out sweating and having to use the bathroom. Don’t fight with anyone just sleep it off and talk in the better part of the morning when you feel better. You are there at the bar to have a wonderful time and have fun not fight and do all this crap that will cause your favorite bartender to have to cut you offf and kick you out. Not a good way to end a day. Or having the police after you cause the bartender had to call on your stupidity. I wish all bar customers knew this.

But the most important thing to do in this situation is to stay super confident and absolutely sure of yourself. Don't take the bill away. Don't look it over like you're not sure what's on it. If you hesitate like "oh wait, hmmm did you order that? Maybe ...." they will run with that and will insist that something is wrong and there's no going back. Instead hit them hard with the "These are exactly the drinks you ordered. When you first arrived, you started your tab and ordered two vodka sodas for your friends and a beer for yourself. About 30 mins later you asked to see a menu and ordered tacos, a beer and three shots. You went to the bathroom and came back and got another round. Remember you made that joke about how dirty the bathroom is? Then you started talking to those girls and bought them and yourself shots. Then they left and you sent a drink to the girl at the end of the bar. Etc Etc" When you give someone a matter of fact rundown of their night, no interruption, no hesitation, they usually realize that you know exactly what has been ordered, when and why and they're the ones that lost track. they usually quit the argument right there and you don't even need to get the time stamp report. But if it continues, call a manager and use the time stamp report to back yourself. up. Hope that helps and thanks for watching!!

Alley I so love your channel and your voice so calm and peaceful. Yes. I drink it up like a boss and I love to go to the bar. My job is that of a working pianist so I can probably assure you that i love drinking cause i am a pianist. I am the life of the party but respectful when I am drinking. I also am totally blind and ride the bus everywhere I go so I have the blessing of being able to drink as much as i want and get on the bus and not having to worry about getting behind the wheel. That is a totally god send blessing. I am so funny at the end of the night after drinking but maintain that respect for everyone in the bar. Never have i had any problem with sexual groping and freely touching girls or non of that. Never ever as long as i have been to the bar and drinking. I mean I can drink my ass off all day and still maintain that respect and love for people. Anyways that is like this. When I am at the bar and many people don’t realize this but the best thing to do as a patron at a bar is to sit there quietly and smile. That is what i do. Never shout or yell your bartender’s name and say “hy!!!! Get me a drink miss bartender!!!” Never ever ever as a patron whistle or bang your silverware on the table. You can sit there all night and the bartenders will love you if you just keep quiet and drink and have fun. Even after the alcohol gets to my head I still maintain that respect cause I know what i am doing and how i should act. A lot of people will whistle or bang the table or call the bartender and that is not going to make them come faster. What i do is sit their with my hands in my lap after a drink, maybe give a quick and i mean Quick Look over at the bartender if i know they are their and smile and then turn my head facing forward. Sitting there quietly and patiently with my napkin in my lap and hands in my lap. The bartender will appreciate that. The same thing is when I am riding the bus. There is a way to ride. Many passengers on buses will automatically say the bus driver is rude. Think of the bus driver as your bartender. Kind of crazy idea right but where i am going with this. They have a job to do. Hauling you around the city transporting you after a night of drinking if you are responsible don’t start making conversations with the driver. Let them take the lead. Most people think the driver is rude but they are not rude they are only doing their job and some bus drivers don’t want to talk. They just want to transport and keep their eyes on the road where as others will keep you awake by talking with you. The bartender is there to take care of you during the night so yo hare safe and having fun. So rules apply. With the bus driver let them start the conversing. Bus drivers are super good at starting conversations. You as a passenger follow the lead. With the bartender though if you are wanting your bartender just sit there and wait and smile. They are there they will see you. And then everyone will bee happy. Your night will end greatly not a night in some stupid drunken tirade. Hahahahaha. Then the bartender will smile at you next time you come in cause they know how you were the last time. If everyone did this bartenders would bee so happy with everyone and I am sure that you all would bee soooo happy to serve them. But there are elicits that you have at the bar and riding the bus. With the bus driver you never want to start talking with them. Let them start. After all. They are in the front of the bus driving so that means they are in the lead. Let them say something first before you talk. This is coming from a person who has taken buses all their life and still to this day. At the bar as a patron always remember to all my fellow patrons never yell or shout at the bartenders. Listen and sit there quietly and engage in conversing with other patrons at the bar. Never raise and call your bartender over to you. Raising your nad and shouting and snapping your fingers is gonna get you missed and they won’t want to serve you. Just smile turn your head and smile and then quickly take your head and keep looking on forward. Bartenders will love you for this and this is coming from a bar patron. I also let the bartender take me out of the bar at the end of the night to assist in catching buses. Making sure I get home safely after a great night laughing it up and having fun. You will as well as your bartenders will want to remember the drunken nights you had if you are respectful and happy. But going to a bar cause you had a pissed off day and drinking so you can fight? Well, then just don’t drink if you are going to do that. You are suppose to go and have a great time and bee happy not fight your but off and yell cause you had a piss ass day that really nobody wants to hear about. That will just get you kicked out. Try not as a patron to bring your problems to the bar. Leave that for another day. Drink and have fun and laugh a little and get loose but fighting and assault and stuff that iwll get you arrested at the end of the night is. Absolutely not the way to go. And if you do end up getting sick throwing up, what ever you do try. And try and wait till you get home. Don’t throw up all over the bar. That is nasty and the bartender really doesn’t want to have to clean up your mess… it does happen. R i have had that happen. But with me if I did that for example which i did the other day when I came back I got sick at home not at the bar. I proceeded to eat more when i got home and had a coffee and I got sick after that. Hahaha. But not at the bar. That happened at home. And then when you get home just go to bed and sleep it off letting all the alcohol come out sweating and having to use the bathroom. Don’t fight with anyone just sleep it off and talk in the better part of the morning when you feel better. You are there at the bar to have a wonderful time and have fun not fight and do all this crap that will cause your favorite bartender to have to cut you offf and kick you out. Not a good way to end a day. Or having the police after you cause the bartender had to call on your stupidity. I wish all bar customers knew this.
