Chicago dim sum restaurant owner combines best of East and West

A dim sum restaurant owner in Chicago has fused the best of traditional Cantonese cuisine and Chicago culture. Spencer Ng, a second-generation business owner, took over his parent’s restaurant determined to further develop his family’s centuries-old Cantonese tradition. Amid the economic recession brought on by the pandemic, the US-born Ng incorporates Chicago and Chinese cultures in his restaurant, where he brews beer from tea and blends Chicago streetwear into his staff’s uniform.

Errr.. when you said a mix of east and west, I thought the food is mixed. Not the mix of dim sum and street art.
For example, I would like to try dim sum with "western ingredients". Like foie gras, caviar, escargots dim sum, American bbq meat inside buns, Boston lobster dim sum, cheese roll, catfish dim sum, Smithfield ham dim dum, cobb salad dim sum, Alaska salmon dim sum, Mac and cheese dim sum, popcorn dim sum etc.
That is unique.
The restaurant above seems to serve "common" dim sum, and less of a fusion of east and west.

Their service is horrible. Waiters are rude and there’s piles of boxes with paperwork visible for you to see while eating. Long wait times because there are no booths. Just banquet style huge tables that seat 10 people even if you only come with a party of 2 they still sit you at a huge table. Ming hin is way better.

Being a Chef and having been around the world twice the best cuisine is Korean, Indonesian and Japanese.
Cantonese is also highly rated but not the best
