Cinnamon rolls with sourdough discard

  • CINNAMON ROLLS WITH SOURDOUGH DISCARD
    4 cups of all purpose flour
    1 tsp baking soda
    2 tsp baking powder
    1 tsp fine salt
    1 cup sourdough discard
    1 cup warm water or milk
    ½ cup butter
    ¼ cup honey
    Cinnamon sugar filling
    ½ cup butter melted
    1 cup brown sugar
    2 tbsp cinnamon
    Frosting
    8 once’s cream cheese,softened
    ½ cup heavy cream
    ½ cup maple syrup
    2 tsp vanilla extract
    In the mixer with whisk attachment , add butter, water, discard and honey. Mix until all ingredients are combined. Change to the hook attachment and to the flour, add salt, baking soda and baking powder. Add dry ingredients to the mixer at low speed and add a little at a time. Mix everything to combine, then speed up the mixer and mix everything for 5 minutes or until all the dough is rolled on the hook and it is not sticking to the sides of the bowl. Roll dough into a ball, with rolling pin roll dough into a thin dough and more rectangle shape. The thinner the dough the more layers will show on the cinnamon roll. Pour the butter on the dough and using a brush, brush the butter all over the dough. Sprinkle the sugar everywhere leaving a border at the top end to close the roll. Sprinkle the cinnamon. Beginning the end closest to you, roll up the dough as tight as possible. Pinch the ends to seal the roll. Slice with a very sharp knife or dental floss the dough into one inch rolls. Spray or butter a Pyrex or aluminum pan, place the rolls down next to each other. Baked in a preheated oven at 375 degrees for about 25-30 minutes. Let the rolls cool for 10 minutes before frosting them.
    Frosting
    In a bowl, add cream cheese, heavy whipping cream,vanilla extract and maple syrup. Using a hand mixer, mix everything until it becomes like frosting. Frost cinnamon rolls and serve.
