Go in Profile select card and then delete option to remove it from Gpay, then you can add your new card to Gpay. There is no option to remove pin number of card in Gpay

It is not possible to keep 1 upi id for all banks. There are different upi id's for different banks.

You cant add other bank account linked with other phone number. For that you have create new Gpay account with that other number and then you can add the account.
