- Here is my quick pickle red onion recipe:
1 red onion
.5 cup vinegar
.5 cups of water
1.5 tablespoons sugar
1.5 teaspoons salt
Combine sugar and salt with the vinegar, add onion, add water. seal jar, leave on counter for 1 hour then put in fridge. They'll last a few weeks.

Don't stop with onions. Since being diagnosed with heart failure, I've had to improve my diet quite a bit and salads are a go to. I cut carrots into matchsticks and finely slice celery on a bias to quick pickle as well. Not too much salt and I boil my water, vinegar and sugar to combine before letting cool and adding veggies. Easily lasts a month refrigerated. I reuse pickle juice for cucumbers, jalapenos and red peppers.
Pickled celery is so amazing! I don't remember why I tried it, but it was life changing!

I mix my carrots with thinly sliced radish or daikon to pickle.

When I am done with a jar of dill pickles or hot pepper rings, I slice up an onion and stuff them in the jar with the left over pickle or pepper juice. Pretty lazy pickled onion, but they are yummy! Great song! 😊😊
