How to read tell-tales plus tacking on a Hobie Tandem Island.

Teaching my wife how to find the perfect point of sail in a Hobie Tandem Island using the tell-tales.
What are tell-tales? they're the small bits of cloth that hand from the sail and act as a super handy guide to trim and adjust the sail to the perfect position. When both are streaming back, you're on a good thing with the wind.
