Hey thanks for your question! The drop 2 voicing refers to how you make that shape on the guitar. If you go to a piano and play a cmaj7 (CEGB) and drop the 2nd note from the top you get (GCEB). This is a drop 2 voicing and on guitar people play different inversions (CGBE like in the video) of this because it fits the guitar better rather than playing a straight up Cmaj7 (CEGB).
