The most over-rated thing I experienced in Italy, a great way to waste of a good cut of meat is a Tuscan Fiorentina Steak. It's mind-blowing how how much better it could be, I remember being SO DISAPOINTED in Florence.
The bitterness from the charcoal is intense when you burn the meat like this and of course in terms of taste, not good. Maillard reaction is all about caramelising the surface, not burning it. So, it's ok to accept that this was a mistake, not trying to convince everyone that this is how is meant to be done.

I come from Greve in Chianti and that's roast beef, not a Florentine steak! :( Burned outside and too cooked inside. No florentine wraps it in aluminiun foil, since it gets "boiled". Call it a "steak" but take away the word "Fiorentina" from the title. That's an insult... For everyone who wants to cook a florentine steak, this is not the way.
