The cows taste better in my opinion. I got a nice 5x6 bull down last year and I can say I wish I had that many people helping pack out, it took 3 of us 3 trips just to get the meat to camp and we deboned the elk on sight so it cuts down tremendously on the weight. Ended up with right at 320 pounds of meat biggest elk of my life by far. I'm glad to see you spending so much time with the younger generation hunters seem to be a dying breed of people. I'm curious if you guys harvest the neck meat of leave it for the scavengers I'm one of the only people I know that takes the neck meat.

Agreed with the other comment- the family hiking out together was pretty cool. When I saw the umbrellas I thought - what the heck! then I thought about the 4 years I lived in the Tacoma area and thought- why wouldn't a guy haul an umbrellas up the mountain to help cut up an elk? Rain is guaranteed on the west slope and sometime a guy just wants a little more than a rain jacket. Going to try that recipe- I like simple and it looks like something a guy could pull off in camp and have some great base camp chow. Great video!

I left Wa. and now live in whitetail county, I will put in for our elk hunt every year but it's unlikely I will ever get a tag. I miss archery elk season greatly and those illusive blacktail deer. All of the hunts this year are OTC except for the cow elk my cousin shot in this video. If you haven't, check out my video I uploaded a few videos back about how to hunt Washington. I cover the OTC tags in that video.
Had to laugh at your comment on hunting Washington. Hunting in this state Period is a challenge. The regulations make it challenging..not to mention that the amount of real estate available also makes it challenging.
I think my family’s sausage recipe would have you rethinking grinding up your rounds lol. I’m not talking about that nasty stuff the butcher makes for guys either. I personally take tenderloins( #1 priority) backstraps, a few round steaks then grind the rest. I use it all for sausage- German, Indian, and summer sausage. No burger- to me that’s a sin. Btw- I think venison tenderloin is the best meat on earth.
I don't have a single friend or family member here in Wisconsin who hunts. Just waiting on my son to turn 12 so he can get his $50 resident tags for elk in Colorado..!!! Ha
Our state game department just won't give better dates and times for elk hunting. It should start a little later. The managers in the game department really don't care take your money with shit areas to hunt

48hr dry aging before cooking helps tenderizes too. Just don't go for the cheese smell unless you know what you're doing.
