Dear Iman, I make sambhaar every week because my kids love it. I studied from a Tamil school in Delhi so I can read and write tamil.its the most healthy meal. I am basically from Uttarakhand but born and braut up in Delhi. Delhi one can get softest idli. I make it once in a fortnight. Yes, Sambaar is quite common in Indian cuisine, and it is not difficult to make, in fact it is very easy to make. And it is pronounced as Saambaar not sambar, which is the problem with lot of North Indian people. Saambaar can be made with just any single vegetable or with 2 or 3 vegetables.The small onion which you saw them putting is called Saambaar onion or shallots, and drumstick is eaten by sucking the pulp and throwing away the skin. Saambaar is made in different ways in different south indian states. And the oil they used was Sesame oil which is used for making Saambaar. Making Idly / dosa Uthappam etc is all very easy and can be made with 1 batter itself. We have varieties of tiffins like upma, Wadas, Adai, Pesarattu, etc, we have so many healthy varieties that eating everyday only bread is absolutely out of question. The Saambaar made in the video was very different from the way we normally make, for many of us don't add raw mango and garlic to the saambaar. And i was also surprised to see a lady eat paad with Payasam or kheer. And Kheer also we have many different varieties. Indian cuisine is mindblowing. We also love to have curd rice without which no south indian meal is complete, for it is very cooling especially in summer, we would carry it in our tiffin box to school,colleges and offices and enjoy it during lunch time with some lemon or mango pickle. Learning to make Indian dishes is easy peasy with the youtube, you just have to write Indian food and you will get countless channels there and with step by step instructions. South Indian food is very different to North Indian food. Shouldn’t compare the two. Even Biriyani has its origin in Hyderabad in Andhra Pradesh - another South Indian state that has its state language - Telugu - sung in every part of the world right now after the Oscar win for the Telugu song - Naatu Naatu.
