  • Today, I attempted The French Laundry recipe and Chef Thomas Keller's Recipe, Lobster Mac and Cheese! I learned so many things from attempting this, despite the numerous times I've made lobster bisque.
    This was definitely one of the dishes that made me go wow!

    Your vids are really really good. I just subscribed and will be making the Lobster Mac and Cheese. I already have the cookbook, but watching you really demystifies this recipe. BTW, I wish you included the recipes although I image it would be a pain in the ass for you.

      Thank you so much! Honestly, I would love to add the recipe but for videos like this, it feels ethically wrong to do it because it's chef Thomas Keller's recipe that he shared through his books and masterclass 😭.
      I know food recipes aren't copyrighted but it's just my way of respecting the chefs that work so hard coming up with these recipes.
      For other recipes, I will try my best to share all the measurements!

      I kinda like Anti Chef but his 24 minutes of beta neurosis is annoying when I just want a quick recipe. But his kitchen and camera work is awesome

    Hi I love your videos! If I may make one suggestion: please take it easy on the jump cuts, or somehow smoothen the transition between them. The jump cuts can get disorienting. Anyway, I loom forward to watching more of your delicious videos!

    Hi, Daniel just wondering whats the ratio water to vinegar when you boil or blanch the lobster? Im assuming the vinegar will loosen the meat from the shell right? Im a chef also but still training on new techniques. Great dish

      yes the vinegar does help it loosen the meat from the shell :) I believe it was 1/2 cup vinegar eery 8 quarts of water!

    It's awesome video!! Could you show me 'oysters and pearls' by thomas keller? I have french laundry cookbook and I heard It's his signature dish but I don't understand how to make it. Becase i'm korean so there are many things I don't understand. If you have cookbook, it's on page 23.

    Hi Daniel! I have a question for you regarding this recipe. I'd like to make the lobster stock the day before I make the dish. Is it safe to par boil the lobster, make the stock and refrigerate the not fully cooked lobster for a day before you finish the dish?? Will it hurt the quality of the recipe if you do that?

      You can totally do that, in fact that's why chef Thomas Keller came up with this method :). Just make sure to cool down the lobster meat as quick as possible, maybe keep them on ice, etc.

    i have to say- i prefer your instincts to include the tomalley. yes its not as clean and refined a flavour- but that tends to be the way with fine dining. they prefer clean and refined flavours rather than grittier , more flavourful choices. in this case- i think your instinct is right- but would be interested to see you compare .

      Yes it has a very clean lobster flavor indeed! Interesting how much they also reduced this to make the flavor so concentrated while keeping it so pure. I will do a comparison video some day for sure! Thank you for watching 🙏

      This one I used in the video, I haven't made it myself actually. Normally, you would slowly confirm lobster coral in a neutral oil or clarified butter, and add some tomatoes and paprika for additional flavor and color!

      That's exactly what it is! Sometimes adding corals/heads too, for additional flavor :)
