    Storing a watery-like Swiss meringue buttercream in a fridge for 30mins. then mix it again in a electric standmixer will help it make more firmer. I encountered this problem so many times and I mind u this trick works!👌🏼

    Im a beginner in baking.. And I would love to master that swiss meringue buttercream but everytime i try make it I always ended up failed :(..
    Tried techniques and patience suggested but none of it worked.I dont know what's wrong with my doings.
    Been trying to use another icing recipe..
    But thanks for this video. This will be my last try.

    Hi! I’ve tried this recipe and i never regret choosing this as my “ go to” smbc.. this tastes soooo good, tho it had to be made in a fully airconditioned room, in a place like ours at 34° weather hot. It turned out really pipeable and firm👌🏻The sweetness is tempered and finger lickin good. Thank you so mch!❤️

    Can I add liquid like coconut milk to the icing? If yes, how much can I add without the icing being too soupy?

      You can how much it depends on how thick you want the buttercream to be . I’ll start with 1 tbsp at time

      They are both good, what is important is on what kind of cake you are using it . Cream cheese frosting works well with carrot cake and red velvet cake.

    Hi po.. un pong 178 g of eggwhite ilang egg po ba yan? and 356 g sugar ilang cups po ba yan sis? 534 g of butter ilan ring cups yaan? sana po makareply po kau kasi bukas na po ang magbe bebake

    My sweet ambition, How many days po store ang swiss meringue if nasa fridge, and if a cake with swiss meringue buttercream how long stay outside the fridge pag po hindi naubos agad ang cake? They tell using eggewhites have a salmonela. Thank u po.

      +Love Sweets swiss meringue buttercream will last in the fridge for weeks outside it can last for several days the only thing you need to worry is if its a very hot day your SMBC might melt. The eggs are cooked and it contains more then 50% sugar which prohibits the growth of bacteria.

    Mam, why my swiss meringue so watery? it takes me around 2 hours to mix it in an electric hand mixer? but when i put it on the ref and try to beat it again it forms ok and steady. hope you can help me. thanks

      +Olive Datul it becomes watery because your eggwhite sugar mixture is still hot when you add your room temperature butter, so when you put it in the fridge the butter have time to solidify again

      +Koulu Koti if you are using room temperature butter wait till the eggwhite sugar mixture cools down while beating continuously then once its cool to the touch you can add the butter, in this video I use cold but not to firm butter

    hi sweet ambitions, its me again =)
    i have some questions..
    1st, if I used unsalted butter, will it affect the volume of the icing?
    2nd, is this the same texture and taste as the regular butter meringue icing wherein it doesn't require melting the sugar in a double boiler.

      I used unsalted butter, no it will bot produce the same result if you don’t heat up sugar and eggwhites , this is a very crucial step

    Thank u for the info, d2 po ako sa uk, so its cold country din po, I prepare the cake outside so that the sponge cake still soft. I learn a lot frm u , baking cakes, they love it po, but I use to less sugar kc po may diabetic sa amin, ok lng ba un, na nagleless ako sa sugar both sponge cake and SMBC.?

      +Love Sweets sa cake its ok but you have to do it sa eggyolk mixture don't change sa meringue and you cannot change sa icing :D plus the icing is not to sweet I promise

      +Michelle Dayego depending on how hot the day is , if you want it to be stable and withstand hot westher I suggest adding vegetable shortening

      +Franly Belle as long as its not into a direct sunlight it should be fine, but consider placing it in a cool spot, on my recent to to the philippines I made this frosting and it held up pretty well.

      All you need to do is to use the 1-2-3 principle. Lets say 1/4 cup eggwhite then 1/2 cup sugar and 3/4 cup butter then you can double that using the principle

      +Heiley Jade problem with unsalted butter is you cannot control the salt that is in the butter, your cake might get salty

      I don't know how to answer that question :D its different since marshmallow icing does not have butter and no glucose or corn syrup although they both involve eggwhites

      make sure that it will fit in your oven, because this type of cake needs to be bake straight away, it cake batter does not do well waiting for it to be bake the air pockets starts popping making your cake flat

      +Kiko Catiggay it varies from egg to egg but what you can do is using a measuring cup, and apply the 1-2-3 principle for example if you are using 1/4 cup eggwhite use 1/2 cup sugar and 3/4 cup butter :D
