- Pasta shapes matter. Way too many times I've had to listen to people say something along the lines of, "It's all pasta in the end, just use whatever shape." False. In Italy, sauces and shapes are carefully and intentionally paired with each other, and while you can find both spaghetti and rigatoni coupled with carbonara at restaurants in Rome, you (hopefully) won't ever see carbonara served with fresh, egg dough pasta like tagliatelle. Why? Because you need the chew of durum wheat dried pasta to stand up to the richness of the egg yolk and guanciale in the sauce, as well as the starchy pasta water that it produces to emulsify the sauce. Egg pasta is too delicate and its flavor and texture would be drowned out by the brash bite of the pork fat, black pepper, and Pecorino Romano
Italians usually don't see the need to go into the specifics of why you would never commit such pasta heresy, and instead just matter of factly say, "non ci va" (it doesn't go [together with that]). So, which shapes are worthy of your time? We decided to buy a ton of pasta, set up a camera, and recorded a long series of pasta rants. Check them out.

Orzo cooked like risotto (lightly browned in oil then stirred with bit by bit of hot stock) is excellent, but other preparations not so much.
Try in pasta salads, soups or rice pilaf. Also, a very easy pasta to toast in a pan which will dramatically change its flavor.

Pastina is great for many elderly or kids as well. I love it in soup.

Capellini are the king of thin sauces! If you're making Capellini and your sauce isn't thin or lacks seasoning it's gonna taste like nothing, try Capellini aglio e olio! Delicious!

Rigatoni, bucatini, pappardelle, spaghetti and conchiglie those would be my favorite

I don't know, I'm from Colombia and we make rice with angel hair pasta (we call it arroz de fideo or noodle rice I guess) and it's 🔥
Also, someone mentioned you can add them to soups and they are a nice addition 🤷🏾♂️

Yes, it can go perfectly answers his hypothetical question about eating a dish, and being glad that angel har was the shape chosen for it. I challenge Sasha to make Arroz de Fideo using Rigatoni instead of Angel Hair. That being said, for the vast majority of pasta dishes, angel hair is indeed sub-par.
I really love orchiette you can add peas or mushrooms and they cup the veg and the sauce really well
200% agree, rigatoni and buccatini are amazing. I liked Sasha before, now I his friend forever!
Tagliatelle is a classic for rich hearty sauce too ^^
If you like Rigatoni try Tortiglioni is the same but with a twist

My top 5 are fafalle(why they don't call it butterflies is besides me), elicoidali(small twisted rigatoni), caserecii(my go to macaroni alternitive), Denti rigati(it's close to what your site calls lumaconi/lumache, but with less of a flare at the end) and linguine(it's a good default long pasta, copes with any sauce. I take it over fettuccine any day, It's the curve that does it for me). and an honourable mention to orechette as a decent fafalle alternative, and penne lisce, I cannot get zitti here and penne rigatte is used for things it shouldn't be. oh, and risoni/orzo, a warm bowl of sauced risoni can stand up on its own.
Someone already commented this on another video but if you play any video this guy’s in at 1.25x speed it seems normal, although it will affect the others

Can’t believe you didn’t throw some deep shade at farfalle (“bow ties”). They are THE WORST.
My top five in no particular order:
Farfalle (bows), Cavatappi (corkscrews), Conchiglie (shells), Fusili (screws), Penne (pipes).
Bucatini, one of his top pics... Why? Sauce doesn't get in it and if you did slurp it, you get more air. Most annoying pasta ever! Then he doesn't like linguini? I can't.
He didn't even review my favorite, spaghetti rigati.

Bucatini freaking suck tho, you try to eat a forkful of that and you will just make a gross shlurping noise in front of your friends while those dumb tubes trash around coating everything in sauce. I hate them with every fiber of my being.
