SIOPAO using Cake Flour / Steamed Meat Bun / Chicken Asado Filling Recipe

  • Siopao (Steamed Meat Bun) with Chicken Asado Filling
    ✔️Dough
    1 cup lukewarm water (240ml)
    1/4 cup sugar (50g)
    1 & 1/2 tsp instant dry yeast (5g)
    3 tbsp oil (any cooking oil) (45 ml)
    3 & 1/2 cups cake flour (455g)
    2 tsp baking powder (10g)
    1/4 tsp salt (1.5g)
    ✔️Chicken Asado Filling
    1 tbsp cooking oil
    1 clove garlic
    1 small onion
    1/2 cup brown sugar (100g)
    1/4 tsp ground black pepper
    2 tbsp oyster sauce (30ml)
    3 tbsp soy sauce (45ml)
    1 cup water (240ml)
    2 tbsp cornstarch (diluted in water)
    3-5 pieces star anise
    400 grams chicken meat (pre-boiled & cut/shredded) (may use pork or beef meat instead)
    Recipe Yield: 14 pieces, approx. 55 grams each dough (excluding the filling) [or cut at any preferred size]
    💡Cake flour has less gluten than all purpose flour and bread flour, so it won’t produce much airy texture on the dough when proofed and therefore may reduce/ prevent the tendency of the bun to deflated when steamed, and will still come up with a very soft texture. Thus the use of cake flour helps retain the shape and avoid from wrinkling the bun once cooled.
    ❗️For some cases regardless of the type of flour used, shrinking and wrinkling of the bun might arise once cooled due to such reasons like improper thickness and shaping of the dough, overproofed dough, undercooked, steam is too hot or steamed for too long and too much condensation dripping down the bun during steaming(an option to wrap the lid with cloth/towel can help to prevent the dripping).
    ⁉️Good shape steamed buns are definitely attainable too using All purpose flour and bread flour in replacement of the cake flour but it may vary on the recipe. Using the same amount but different type of flour in this recipe may differ in the dough consistency, so altering the proportion of ingredients might be needed to match it.

    Just made this. They are really tasty and soft, but I underestimated the skill needed to wrap these siopao beautifully! It was hard to close the dough after putting the filling in since it's my first time doing it hahaha

    How to avoid siopao from wrinkling after you steam it?

      Do not open the lid right after they are done. Wait for 10 minutes then open the lid they wont wrinkle
