    I know this is not a comment specifically for this cast, but chose to put it here as it is the last one I've been through. I just wanted to commend you on all the great casts you are posting, they really make a difference for a wine lover, as my self, in training first for WSET2 and 3. I have for a long time been interested in wine, but have grown to enjoy it more and more as I study and taste my way through the wine world. I find that I have a particular taste for red wines based on tannic grapes, and where the wine in the bottle lean more towards earthiness than the very fruit heavy examples. Grapes like Nebbiolo (especially expressed in Barolo), Sangiovese in Brunello di Montalcino, Tempranillo in Ribera del Duero, Aglianico in Taurasi, and more and more Bordeaux blends (especially left bank), are some my favorites. I am working my way into other areas and grapes, but have a lot more learning and tasting to do to develop my palate. I have lately worked to create my own overview of all the elements that are important factors for how the finalized wine will taste, and have had immense help from all your great casts. I'm sorry for the long comment, but just wanted to thank you for all the help, and hope you continue to share your knowledge with all of us. Thanks!

    This is gold! I mirror Steve's comment on this. I also have to spend time defending the sorely misunderstood sulphite. Now I can just send this to people! Great work!

    I've never spend a minute worrying about sulfites in wine. Not planning to start now.
    I always understood the sulfites warning as part of the drink responsibly aspect.
    If you don't overdo it you'll be just fine.

      I don't think there's much to worry about, unless you have a severe sensitivity and then a number of foods are more likely to trigger it than wine. Cheers!

    People are always complaining about sulfites. I'll take it over bacteria any time.

    This was great! I can't tell you how many people say to me "the sulfites in red wine give me a headache" or do you have sulfite free wine. I have explained many of the things you mentioned however this cast gave me more ammunition to better explain the misunderstanding that exists. Have you ever considered doing something about wine and cheese? Thanks for doing what you do!

      Thanks and I'm glad to hear the cast was helpful. There's a ton of misinformation out there about sulfites and wine contents/chemistry in general, and I like to think of the science and tech casts that I do as my little bit to correct the misinfo. Cheers!

    About the headache, i drink only natural wines and i don't recall having headache never. They tend to be lower in SO2, and totally when the wine is clasification sans.
    Sorry to bother again asking about your upcoming videos, but do you have in your plans to do something about fermentation? how the winemaker deicides how he wants the wine to be during that process.

      Happy Beaujolais Nouveau day to you, too! To answer your question, I don't have any immediate plans to do something specifically on fermentation. It's an interesting subject, but I'm not sure how I would craft an entire video out of it. That said, I'll keep it in mind, and if a good approach occurs to me, I'll do a video on it. Cheers!
