I've noticed the regrinds are typically used to mix the ground material together better if there are radically different "parts" of what's being ground, like if he were to do fries and a burger, a regrind helps keep the final sausage from being exclusively fries and then exclusively burger.

The Maillaird Reaction (food browning) occurs between proteins (cheese) and carbohydrates (breading), so I'm not surprised at all this sausage came out tasting really good. You should try double grinding and then cooking for longer, that'll give you a more intimate mix of proteins and carbs and give them more heat to turn into wonderful, delicious tasty things.
It's such an east coast thing to pronounce that like that. I'm from Boston and I can think of like three other things off the top of my head that are butchered like that and probably more if you give me some time.

did you put too much salt in your last pie and wonder why it was disgusting? then try it again without the crust and just put the salt in and wonder why it just tasted like pie filling? a change to a recipe changes the recipe.
