Hey sausage man, my friend's daughter is the same way, LOL. Look up The Takeout's "The Way-Too-Detailed Guide to Recreating Pizza Lunchables at Home", then scroll down to step 1, "The Godless Crust". What the author basically did was use some homemade pizza dough and roughed it up like it was your worst enemy, used 12 grams of sugar and salt. Put them into forms and just overcooked them, ending up looking like stale lil pucks. We followed this and it did the trick, hopefully this helps (more detailed version is on the article).
In elementary we went on a field trip to a nature park and they told us not to bring lunchables because of the waste they produced. My mom was supposed to be bringing me lunch. Not only was she so late she just barely made it to the second bus (I was on the first), she brought me 2 lunchables because they didn’t have what I wanted. Sure enough the teacher made an example of me and pointed out every piece of plastic, made me carry it all day in a paper bag, and then wait until we got back to the school to go through it and see what was recyclable in it as a lesson for the class. Made it a point that I would never eat a lunchable again (I have…oops)
Yep, those pizza bases look just a product called Naan Rounds I find in my supermarket's bakery; they're either with the flatbreads, or with the burger buns, for some reason.
I have had both, and I gotta say they are not the same. The Naan is a decent approximate sure, better for an adult, but for a kid who is picky enough they don't eat the rest of the lunchable. It probably won't scratch the same itch. But that is exactly what I thought too!

Here's a tip if you want Lunchables cheese and crackers: it's just ham, cheddar cheese, and Ritz-type cracks. If it's sufficiently thick cut ham, it gives you that nostalgic flavor that you've enjoyed from trips to the zoo. Remember, the cheapest kind of off-brand is home-brand.

If you have a Smiths of Kroger or something similar nearby: Get some random cheeses, get some buttery crackers, get some salami, get some olive bar stuff. Cheese and crackers is underrated and honestly you dont need much to get full. (I like brie, gouda, and blue cheese on crackers. Add some jam or fancy mustard - you're somewhere between lunchables and charcuterie)

Wet bread, when expressed, will give up its moisture content fairly easily. It's basically just an edible sponge.
A lot of times, the 'sausage water' is actually from putting the soaking wet casing on.
