      Hey Mike, I pray that Ryan will heal up quickly. Glad you guys enjoyed the video. You sure do make some amazing rubs!!! Yes, I look forward to hanging out with you later this Summer!!! It's gonna be fun!! God Bless you brother!

      Thanks Troy. He is doing well and the doctors changed up the procedure which simplified everything, now we just have to wait and see if the screws and plate hold in place while the bones repair themselves, many of his neck bones in the area of the biggest fracture are all cracked, so he has to eat lots of protein and just take it easy.
      God Bless

    Hi T-roy, I personally got the same kit called the Cajun Bandit WSM Pimp Kit about two years ago, and I love it! The rotisserie ring will also work on my Weber kettle grill too!! It makes the best rotisserie chicken, Tri Tip,Prime rib roast and round roast! Yum!! enjoy!!!

    • @TROYCOOKS
      @TROYCOOKS  7 років тому

      Ha!!! They called it a Pimp Kit, huh? Yeah man, I can see me having a lot of fun with this rotisserie. I may even attempt a brisket on it!!! I appreciate you watching James. Have a great week brother!!! And keep that smoke rollin'!!!

      Hey Rich, I was very impressed with that rotisserie and my WSM held 350-360F very well. Even though I slightly overcooked the chicken, it still turned out really tender and juicy! I think you will enjoy the rubs from HMP. I've been using them for quite a while and am always impressed with the flavor of his rubs. Plus, they aren't loaded with salt!!! Cheers brother!!!

      Get ya one Austin!!! They sell the rotisseries separately since you won't need the full kit that I got for the WSM. It worked fantastic on my WSM and I'm sure it would work great on the Kettle also.

    Dude I have the same rotisserie for my WSM and it's incredible! I highly recommend trying to smoke a whole pork loin rubbed with a sweet and garlicky rub. Stick an apple and onion on each end of the rod and you'll be in heaven!

    • @TROYCOOKS
      @TROYCOOKS  7 років тому

      Yes indeed, I'm loving the rotisserie. And I can't wait to try out your suggestion! That sounds really good! I bet Prime Rib is great on it too!!! Do you use water in the water pan? I'm wanting to try the rotisserie without the water pan so the drippings will hit the charcoal and produce even better flavor. Thanks!!

    • @polskaking69
      @polskaking69 7 років тому

      Personally, I use the water pan so that there's some moisture inside the cooker. If the WSM's not packed, I'll put a dripping pan on the bottom rack with some herbs, spices, veggies, etc. and make a sauce or something with them. I don't think tiny amounts of fat and water hitting the charcoal enhance whatever you're cooking. Whatever liquid is hitting hot coals will instantly evaporate and probably doesn't even reach the meat to add any sort of extra flavor. Think about putting butter, lard, or oil on a screaming hot pan. You get tons of nasty smoke and a burnt flavor that isn't pleasant on food. The water pan also serves as a nice barrier between the charcoal and food. I believe the WSM is sort of an indirect cooker. But I digress, there really isn't a "wrong way" of cooking as long as your finished product is delicious!

    • @TROYCOOKS
      @TROYCOOKS  7 років тому

      Agreed, I'm going to do some testing and find out. I won't put up any videos about food I don't like. I appreciate your feedback!!!

    Cajun Bandit doesn't sell this set up anymore. 😩. Been trying to get it for 2 years and it says not in stock,. Instead I got one on Amazon but its for a weber kettle. Bottom of the ring fits on the WSM18" but the lid I'm going to have fig something out as it doesn't fit snug or I need to find a 18" kettle lid . Best thing is it was only 80 bucks, looks well made. Cajun Bandit wanted 200+ for the same set up.

    Just subscribed I'm enjoying your down home humor and watching and learning from how you cook, I just got a New Braunfels, TX horizontal cooker/smoker from a neighbor, hardly used, and I'm itching to try it out soon. I'm going to play around building fires in it first just to get used to how it works. I noticed in the video of the different pork bellies that none of you guys have missed many meals, but I've no room to talk. LOLGabby

      Hey James, as the bird rotates, it bastes itself in its own juices helping to keep it very moist. I do want to try doing another bird without the water pan so that the drippings will hit the charcoal and produce even more flavor, but the bird was fantastic this time too. Thanks for watching!

    I have trouble getting WSM 22 over 250 degrees and that's with all the vents open top vent fully open and a full 16 pound bag of charcoal, I usually do fill the water pan almost two full capacity but not all the way is that why I'm having this problem?

    • @TROYCOOKS
      @TROYCOOKS  7 років тому +1

      I didn't have any problems getting my 22 inch WSM up to 350F, in fact, it varied between 350F and 370F during the cook. I lit the charcoals just like I would for a kettle grill instead of using the Minion method. And my water pan was about 3/4 full. I'm not sure why you are having trouble getting yours up to 350F? Perhaps it is how you arrange or light the charcoal? Perhaps it is the brand of charcoal? Have you tried using lump? That burns hotter and may help you?

When I cook on my WSM, I see smoke leaking out around the lid and the door, but it doesn't seem to effect the quality of the cook, as the food is never lacking a good smoke ring and a nice smoke flavor.
