    I've landed on a similar recipe with bloom and 2 pours. Got a bit strong today with finer grinds but tasted nicely with bypass. Then went coarser and was more balanced strength but had astringency.
    I've been thinking of dialing in an equal 3 pours (no bloom) recipe with around 10 s to 13 s between the pours. The early water should extract less than after a bloom similarly to bypass. Could maybe make less strong without astringency?

      I haven’t made a great cup with 3 pours yet. Will test it again and share my results when I get it right.

      ​​​@@SimonAndrewCoffeeI tried 3 equal pours no bloom and the brew is much more balanced in terms of sweetness and acidity than bloom 2x into 2 equal pours with 15 s between. Even though the three pours (without bloom) tasted quite bitter I sipped it up quickly. Will adjust grind or lower temp of last pour.
      I think astringency was low and balanced between acidity and sweetness was great. Not too strong either.
