- Today I am going to make the creamy avocado dip I use on everything. This is great as a dip with chips, tacos, and flautas. I sometimes use this as a dressing for salads or mixed with tuna fish. This is gonna be good!

INGREDIENTS
2 small avocados
1/3 cup of pickled carrots / chopped jalapeños
1/4 cup of pickling liquid from carrots
1/2 cup Mexican table cream
1 Tbsp fresh lime juice
3/4 cup to a cup of water
a handful of fresh cilantro
salt to taste

Looks amazing. You would get more juice out of the lime if you flip the lime over...and it would squeeze easier.
Yes, glad someone else commented about the lime. I know it seems weird, but if you put the lime with the open cut down, it juices better.
I always say that if I had a cooking channel I would purposely do some things weird just to see how many comments I could get from it. I don't think she was doing that but if she was I would have to high-5 her!

I just have to say, I love the way you always use what you have. You always tell us “whatever you have will work” and things like that, and it reminds me that cooking isn’t always perfect. Those avocados are beautiful! I was taught a guac recipe years ago by a lady who has this food as part of her heritage, like you. 😊 for over 30 years I’ve made it the way she showed me. Now I have another recipe to try. Thank you so much!

I never really liked Cilantro then I had a bad 'soapy' experience in my 20s that put me right off it to the point I'd gag if tasted it 😂 Around 20 years later in 2019, I started using it again as I felt my Mexican inspired recipes were missing something. Trick is to use very little and maybe gradually increase the amount to desired taste ☺
I will definitely be trying this one. I love the holding the corn tortilla tip. I always held mine together with a toothpick. 😄 I like the idea of softening the tortilla with oil in the microwave. I usually pre-moisten with water and microwave, but they fall apart. Thank you for the good tips and recipes.

My family does a sauce similar to yours& we eat it just like that with chicken flautas. But our sauce has avocados, onion, tomatoes, lime juice, canned jalapeños& juice, cilantro.. so basically like a blended guacamole..
in California these would be called taquitos. If we used flour tortillas,, then it would be a flauta.
I just made tacos de nada and this to put on top. I didn’t have jalapeño to put in but it was still amazing. Everything I’ve made from your videos so far has been amazing. Definitely going to buy your cookbook.

I tried to do this in a video of mine today. Mine came out almost like a mouse. I’m guessing I should’ve used more water or milk to thin it out.

What a simple recipe. Many years ago I ate at a restaurant at the end of Olivera Street in Los Angeles that was famous for its taquitos and avocado sauce. Sooo good. This looks very similar. Going to get some avocados soon and duplicate this. Thanks for sharing.

😂...I've always thought cilantro tastes like soap.... That's why I can't eat it often and it's really healthy for us...
Looks great. Thanks for the tip on flour and water to hold the tortilla together. Last time, I ran out of corn starch I used that glue with the cow on the label. Half the guests said they were the best taquitos ever but the other half threw up... within minutes! I heard they trying to blackball me from future Christmas parties.

I know this is a dip, but it reminded me so much of my mom's taquitos with guacamole.
Her secret to her super flavorful blend was mayonnaise. Plus she added boiled green tomatoes and serranos instead of carrots/jalapenos. Cilantro and lime juice a must. Plus onions. ALL blended to a velvet texture.
Her taquitos were made with pot roasted tri-tip that she later shredded.
My all time Mexican plate. I could eat them for dinner, tomorrows lunch and dinner again!
Baby spinach for the win!! I’m glad there’s a sub option for cilantro. And I wish cilantro tasted like soap; if that was the case, I could power it down. It tastes like socks and broken promises to me. 😂

I’ve looked in several grocery stores in Mexico City and nobody has your Mexican Crema! I showed pics and videos and they still don’t know what I’m talking about!😂😂. They do have crema in plastic tubs but it’s a completely different consistency. 😱

I need to try this. I have a Fuerte avocado tree. We start picking them in November. I have already harvested 43 avocados & given them to friends & family. We are popular this time of year.😊
What can I use to substitute the Mexican crema? My mom uses it, but I’m in another country and finding anything for Mexican authentic dishes is hard.😢

I wouldn't mind being your neighbor if you share! Oh man, do I adore cilantro. It's also really good for the body-- cilantro is a heavy metal chelator, ( detoxer.)
If someone asked me two questions
1. If you could only have one thing to bring with you on a desert island my answer…avacados!

Have you been to Casa Ole before? (Scattered through the Houston area) They have (or had) a green sauce that was amazing. I wonder if this is similar.
Love your food but this one I am a little surprised at. I can’t believe you added water. I add lowerys garlic salt and sour cream etc. but that liquid cream and water!! Too runny. Sorry.

What kind of filling would you suggest is best that’s not meat for the taquitos? I’m 3 months pregnant rn and this baby doesn’t let me eat much of it 🤢 LOL

The “cilantro tasting like soap” comment has me going down a Google well, lol. I never knew there was 20% of the population who taste soap when they eat cilantro. Learn something new every day, 💡 🌞
Culantro is a good alternative to cilantro. My partner can handle cilantro, but is A-OK with culantro. Or you can use a large leaf of lettuce, like romaine or buttercrunch.

Yummo! Quick tip for you - you'll get a lot more juice if you put your lemons and limes in the citrus squeezer with the cut side down towards the holes.

Has anyone tried this with sour cream instead the crema/table cream? I got the jars confused at the store and brought home the wrong one. Will this mess up the sauce?

Yummy. We love Flautas!!! ( don't know if I've spelled it correctly or not ). Our next door neighbor taught me how to make these not long after they moved here. They are from San Luis, Potosi. She uses toothpicks to keep them together and so do I. They are easy to make and are delicious! Thank you for the recipe for the sauce. Definitely a must make!!!
