Indonesian call it REBUNG.
And it can be delicious in any indonesian cuisins...
Especially with SANTAN and SPICY taste.
Usually I cook it as LODEH or just boil it and make KULUPAN. Eat with sambal or mix into javanese salad (PECEL).
I'm starving, by the way 🤤

The way he cut the bamboo in the beginning is MASTER SKILL. You can never teach how to cut as good as he does.. thats pure experience and life. My respect for these hardworking men that make it look easy but it's not. It's very skillful
