Just made this. It was incredibly easy. I had to increase the time for it as the inside was still raw (but that was my machine) And i might reduce the salt ever so slightly next time. Overall, excellent recipe.
I would rather put it on one side of the bread … fry it shrimp side down, add some extra butter and flip over add mayo another slice of bread and make a sandwich….just toast in a lightly buttered pan…. So much better. This will just make you have the squirts
No adverse effects? I've seen posts about the air fryer thing before and it seemed weird to me to be cooking shrimp up between bread like that in the air fryer. I was worried about undercooking.

Looks great. We love using the air fryer method too, but for the sauce, we use mayo, sambal olek, and a tiny bit of honey.

I’d be scared that cornstarch might be raw and plus you already have egg as binder. No point for both
Just probe it with a thermometer in the middle if it's reached 203 F or 96C then the corn starch is completely cooked
