If you refrigerate the soup overnight then all the fat will be solid and you can easily remove it from the chicken essence. Then reheat the essence and it will become a completely clear soup!
She already said there's no water added inside the bowl and don't let the steam water to get in either. The eventual liquid in the bowl are all coming from the chicken pieces; hence "chicken essence".
Not necessarily to have this type of pot What I did is used a deep plate n placed a bowl upside down then put the chicken pieces on top of the bowl. Then put inside a wok n steamed for two hours. Normally I will de bone the chicken n used hammer to smashed the bone, the bone marrow is the essence of the chicken soup. If u didn't smash the bone, the bone marrow coagulated n just retain in the bones.

你好👋用竹籠來蒸點心是最好的不用置疑,因透氣好和蓋頂不會凝聚水珠,造成製品的破壞等,用後要用刷洗淨,放在通風地方吹乾,有陽光亦可嗮10分鐘殺菌然後灘涼後收藏好,多層蒸架的煲,清洗方便,但蓋頂會有水珠凝結,但可以用大張的布將蓋包裹著啲,防止破壞成品的賣相,所以兩種蒸籠都係有它們好和壞之處嘅!謝謝支持👍😊❤️

你好👋其實有些相似的,普通蒸白切雞,雞汁從雞身滲出,都係雞的精華,但白切雞蒸的時間不能過長,否則雞肉過老,變嚡口不夠滑嫩,而滴雞精,是要將雞皮去除,放入密封的燉盅裡,經長時間蒸煮,雞的精華汁液盡出,雞的肉已沒有鮮甜味,當然雞肉都可以吃的!所以滴雞精是種滋補的飲品,補血養顏,病後或體虛人仕最適宜!當然一般一仕都啱飲的!謝謝支持👍😊❤️
