Cookie decorating tips: how to create defined sections with royal icing

- 💕When I want there to be a clear separation between sections on a cookie, I will flood one part and place it in front of a fan to dry for at least 20 minutes before moving on. In this case, I did not have time to do that. I knew I was going to re-outline sections at the end, but regardless, I still wanted there to be natural definition in this design. So, how does an impatient cookier create dimension on a cookie?
Here are my tips:
1) Use a thicker flood. Using a flood that requires a little bit more effort to settle into place will be your best friend in this situation. You have a lot less control over where the icing goes and where it settles when your icing is very thin.
2) Try piping an additional or thicker line with your outline consistency in between sections.
3) After flooding one section, start flooding on the opposite end of a cookie and work your way in. The more time you allow previous sections to dry, the more definition you will end up with. Royal icing starts to crust over quickly, so even an extra minute of drying time helps.
4) Apply less pressure to your piping bag as you approach the line where the two sections connect or avoid flooding right up against the line. Use your scribe tool to carefully and lightly drag your icing up against it.

How long did you wait after doing the body to do the ruffle sleeves?
I waited a few hrs. you really only need to wait for it to crust over. I just didn’t want the metal tip to bump into it and accidentally damage the flood.

That is also royal icing, just a stiffer consistency.
