IT: Il Pastificio Ferrari, che ringrazio molto per la disponibilità delle riprese, è un’azienda artigianale produttrice di pasta secca all’uovo che opera nel campo della distribuzione nazionale ed estera, all’ingrosso e al dettaglio dal 1905 con una superficie attuale pari a 6.000 mq di cui 2.400 coperti e atti ad ospitare le varie produzioni.
Vengono prodotti i classici della cucina emiliana come garganelli, garganelli “mignon”, maccheroni al pettine e moltissimi tipi di paste estruse, speciali, per brodo e pasta lunga; le macchine utilizzate per la produzione sono state ideate da Ferrari stesso!

le uova vengono usate già sgusciate in un sacca sterilizzata, ne esce un liquido giallo prevalentemente composto da tuorli ma contiene una parte, seppur minima, di albume.
