  • These dumplings are so great to have on hand. This recipe makes quite a lot of dumplings, approximately 60. Freeze them to enjoy later by placing them in a single layer on a parchment-lined plate or pan in your freezer before putting them in a freezer bag so that they won’t stick to each other. To cook, prepare them in the same way from frozen. No need to thaw.

I made these for tonight’s dinner. I made with the recipe you worked through, except I used 1/2 ground chicken and half ground pork, because that is what I had. It was delicious and my family loved them. One note: I used one of the new Nonstick Always Pans that you see all over. With those types of pans you only need a few tablespoons of water. I used the mentioned 1/2 cup and I made soup and the potstickers 🥟 fell apart. Oops. Still delicious. By the third batch I had it down. 1T rice oil (it’s what I had available), brown the bottoms 2 minutes, add 3 T of water, lower heat, put lid on and 5 minutes later you have fully cooked, crispy bottom potstickers 🥟👍🏽

Wow! I just subscribed, and am happy to have found this channel! I grew up in a primarily American-Italian family and find this content very interesting. I am starting to explore Asian flavors, event hough I am scared...lol...and this channel makes it seem simple, especially since all of my cooking style is Italian based. I also like how it's not recipe based, basically cook and add what you like. This is a very refreshing way to learn techniques and flavor profiles. Thank you!

There’s not a lot of fish sauce in Chinese cooking but I use it on occasion. It really does add a layer of umami especially in the garlic noodles recipe. I would also add dark sauce and a rice wine (ShaoHsing/ShaoXing).

There are a lot of different varieties but if you don’t have, a dry sherry works as a good sub. We have also been known to use bourbon which also works well.
