Depends on the type of tree. Whether astringent or non-astringent. Non-astringent varieties can be picked when ripe and hard and enjoyed or left to get softer. Astringent, you have to wait until the fruit is very soft and pulpus, unless you blett them using one of the many method out there. One of those methods we did in this video was using alcohol.
@@GreenthumbsGarden thanks for the reply. I have an astringent variety and the birds are feasting on them, so I'll be using one of your methods but I'm wondering if I can pick them before the birds ! If I wait for them to be soft there won't be any left for me :D But is there such thing as picking them too early ?

Can i use wray and nephew Jamaican rum instead?
Rum should work, any decent strengh alcohol. Vodka, whisky, brandy, etc. Use a cheap one!! 😆
