      It's a professional at his profession personality and at home personality. The hard ass that demands hard work and perfection is at work. Outside of work, normal easy going and loving father.
      Here's the thing. There's always different kinds of head chefs with different personalities in every professional kitchens. And virtually all of them want one thing, serving the best food they can. If a restaurant is charging an arm and a leg for their food? The chefs and cooks better be putting forth an arm and a leg to produce that food. So if those underlings to the boss can't simply sear a steak properly for the 3rd time in 3 orders, a harsh bitchin' will certainly be deserved. Especially when most of these underlings are graduates of some high priced chef schools.
      I hope you don't think Gordon screams, yells and cusses when he goes out to eat and the food was bad. Because that would just make him a pompous ass not a passionate professional who is outstanding in his profession.

      +Daniel Ryan yeah the British shows portray him in a warmer light. I saw a show where he help this guy turn his struggling restaurant around. Gordon was such a genuine guy, and showed concern, but on the American shows he's quite blunt, and in your face.

      I agree, but they are beautiful to watch on the hunt. In the US, there a 2x as many regulations on raptors than there are on guns

      With chefs like Ramsay, they hate to use guns on small games unless it's flying cause they don't want the bullet to ruin the meat.

      I have used and shot enough small game to know that there is such little meat loss if you use the correct round. A .22 causes next to no damage on a rabbit and a shotgun with fine #8 shot causes almost no blood loss.

      Bayan1905 The thing is, for a multiple Michelin chef like Ramsay, for small games like rabbit, the wholeness of the meat is absolutely tantamount for the presentation as well as the taste and texture and they are absolutely ANAL about it too! Even the tinniest tinneenist hole and bullet passage = MEAT FUCKING RUINNNEEDD!!!! LOL, I may sound like I'm joking but I'm not. As they say, the analist people on this planet are probably artist...second probably are chefs!

"The flavor of the prawns was extraordinary, fresh, vibrant. Why do you wanna fuck around and put chocolate sauce on there? " I don't want to be boring." Gordon: I thought it was fucking hideous, it didn't work. Lololol. Probably my favorite episode, the swinging donkeys dick kabob was in that one too. Good stuff.

    Impressive as it is, you don't need an eagle to catch a hare. My 620g Harris' Hawk has caught them by himself. Loved seeing Gordon handle the eagle! :)

    Just finished this recipe and in the words of the man himself it was "Fucking Gorgeous" so much so i forgot to drink my lovely Rioja wine with the meal. I washed it down very nicely after though. I accompanied the meal with mash potato with fried mushroom, steamed asparagus and corn on the cob. My cocker spaniel flushed the hare, i shot it, he retrieved it, i cooked it. It doesn't get any better than that. Yes my dog did get a treat.

    @peeweesherman Actually it's an incredibly swift death. Most eagles can hit hard enough to break the hare's neck on impact, otherwise their talons pierce the skull and the hare is dead before it even knows what hit it.

      Difference from wild and farm raised. Same reason natural cow milk cheese is yellow because all they eat is dandelions and farm cows is so white they will add yellow coloring to try to mimic the lost color.

    My neighbour dropped by last monday with a young hare he had hunted and dressed. As he hunts on our land i often get gifts of pheasant, rabbit, hare etc and it often sits in the fridge staring at me every time i open it with me wondering what on earth am i going to do with it to make it palatable (usually it turns out dry and we pretend to enjoy it). So there it was and it was now or never and throwing it away would be a crime. I set about this recipe (apart from i was missing fresh rosemary) and omg. What a treat! The hare was as soft as butter and succulent. The sauce was of a flavour and consistency i've only eaten in Michelin starred restaurants. Just wow! Gordon is a genius with flavours. Amazing! Thank you so much. I shall no longer dread the knock at the door and the "ready steady twat" challenge ahead of me. Any ideas what to do with the legs?

      +Daniel Kolko When you shake a pan with oil in it, little droplets of oil splash about. These little droplets easily catch fire, which in turn makes the oil in the pan catch fire. Oil in the pan on it's own will not normally catch fire or flare because of the density of it, whereas droplets will.

    Dear Gordon, greetings from Greece... I wish for some game recipes for what I hunt, I usually have woodcocks, mallards, hare, rabbits, thrush, many quails, partridges, venison, boar. I truly admire you but I never had the chance to taste your creations. I already have many classic Greek recipes for those kind of meat, but I would like to taste something with you're touch even it would be only from a video of yours.

    I've air gun hunted a hundred or more rabbits and spring hares and never soured the meat or ruined the flavour....and retrieved with a jack Russell .... always delicious in the pot.....birds are for the birds
