Easy Spicy Ketchup Recipe

  • In this video I show you my recipe to make your own chilli ketchup! (If you want plain ketchup without the spice then you can leave out the birds eye peppers. At the same time if you want it hotter then add more peppers...or hotter peppers!)
    Making your OWN ketchup means you get to control what goes into it...so if you want to reduce the amount of sugar in your diet, but still want to enjoy ketchup, then make your own! Plus this just tastes incredible!

    Ingredients:
    1.2 KG Plum Tomatoes
    3 Tins plum tomatoes(or another 1.2KG of fresh plum tomatoes)
    6 Jalapenos (4 red, 2 green)
    25-30 Birds Eye Chillis
    2x Red Onions
    8 Cloves of Garlic
    Piece of Ginger (a bit smaller than golf ball sized)
    Piece of Fresh Fennel (about half a fennel bulb)
    3x Celery sticks
    1 tbsp Dried Coriander Seeds
    1 tbsp Pepper Corns
    1.5 tbsp Salt
    150g Brown Sugar (or equivalent sweetener)
    350ml Red Wine Vinegar
    Handful of Fresh Basil
    1 litre of water (less if you want this to cook down quicker)

    Looks very tasty!
    Can You teach us how to make smoked hot sauce? I was thinking about smoking the peppers and the other optional ingredients as well (tomato, garlic, salt, onion) and that put it to ferment. I can't find anywhere people doing this! The ones o saw doing they have plenty of fancy equipments. Thanks!

      Thank you Anders! That means a lot. I believe in the saying "dress for the job you want, not the job you have"...so I treat my channel and videos as if I was a much bigger channel. I am still trying to improve all the time, and even looking back at videos I did a year ago I can see the improvements I have made!

    I do the same thing using my smoker. Instead of using tomato for filler, I use capsicum. For sweetner I use honey and two granny smith apples. For the vinigar I use apple cider vinigar. For the oil I use coconut oil as it Is a fantastic natural flavour enhancer. The men at work are always asking me when I'm making my next batch. Love your stuff mate, keep it up!

      Coconut oil acts as an amazing preservative as well due to its antifungal and anti bacterial properties

      try to oil a knife, or metal that you dont want to rust. In less then a year all of my hunting knifes smelled horrible. they were not used knifes only one season to the next. it was bad enough that even though i needed to use them at deer camp the next year for for a harvest. I ended up using the cheap kitchen knives in the camper to do what i had to. to get the knifes to even smell right (not on the handle smell) 24 hr soak in vinegar.

      @@dustinallred8782 Animal and plant fats spoils and goes rancid after a while, use mineral oil or wax if you're not going to use a tool for a while.

    looks like you were soaking your wood in preps for smoking. You can get a much better smoke flavor without doing this. I used to soak wood chips, not sure why I started that way. But after much research and smoking foods I found the true pit masters do not soak the wood.

      I found out the exact same thing @Maurice Joy. I'm very hesitant to say this, I don't want to appear as if I'm criticizing @Chillichump but, you and I agree. My reading revealed that what everyone thinks is smoke is in reality, steam. And that it's far better to just straight away, no soaking, use the chips or chunks, dry. BTW, that's another thing, chunks are far superior to chips.

    Great videos...love the content! I used basically the same recipe except half of my tomatoes were roasted, and I added a few cloves of garlic to my tomatoes when I roasted them. Turned out fabulous. Based on the reactions from my family and friends, I will be making quite a bit of this next time!

    yes spicy ketchup IS EXCELLENT I LOVE IT GR8 CHOICE! I LOVE JALAPENO'S FAVORS i dehydrate my peppers into a Jalapeno powder Or roast em in the oven and dry out . grind up is called TEXAS GUN POWDER > This is what i sprinkle on JUST ABOUT EVERY THING YUM fried eggs just about every thing > Yes even in spaghetti sauce

    1. Spicy Ketchup
    2. Marinara Sauce
    3. Pizza Sauce
    4. Spagetti Sauce

    I made this a couple of months ago and today was my 75th birthday, so I gave my children all a bottle each and opened one of mine to try. DELICIOUS!!! The kids all said make more Ma, so as we have buckets of chillies, red onions and tomatoes and I am sooo sick of making chilli jam that they all love I’m about to make a double lot. Thank you for a great recipe x

    Sorry, but oil has no place in a hot sauce... It seperates and/or will get rancid after opening very quickly...

    You had me at red wine vinegar. 😁 Do you purposely pick some of the jalapenos while green? I have been lazy and left them on the bush.
    They are almost all red. Those and a habanero or two will make your charming chili ketchup.😉 I also have a ton of sweet as can be cherry tomatoes.😀

      It depends on what I am using them for! I will pick them green when I am making jalapeno poppers. But for most sauces that I use Jalapenos for, I will wait for them to ripen.

    Thanks for the great vids. I got started fermenting peppers and am hooked. I found Rocoto peppers and they are my favorites so far. Very fruity and the yellow ones are pretty spicy. I add some Carolina Reapers to get the heat up and might add a green Cardamom seed to add to the flavor. If you haven't tried these, I highly recommend them. The sauce has a very fruity flavor that is superb. My 12 year old son pours this stuff on everything. I also use orange, red and yellow bell peppers to change the colors in my mixes. They have slightly different flavor profiles which add a nice touch. The key is fermentation and anyone who hasn't tried it needs to. Thanks again.

    Late to the party but I made something similar with leftover pickled hot peppers after watching this video. Fewer aromatics and less salt but I also added anchovy-based fish sauce and whole pimento/allspice. I think a fish or soy or bean sauce/paste is a nice shortcut to get that depth of flavour that only fermentation can provide. And an allspice habanero scotch bonnet combination is borrowed from West Indian cuisine, it never fails. Time to binge-watch the rest of your stuff!

    Very nice video, thanks for sharing. The only thing that is missing at this point is the ability to taste and smell that delicious sauce. Maybe technology will be sufficiently advanced in fifty years to allow that kind of experience. Anyhow, thanks once again, it's much appreciated.

    I'd recommend adding some cloves to the recipe too - even if you think you don't like them, they add a really rich savoury flavour that goes really well with the tomatoes.

    Sorry I haven't seen your channel until today as your content is great! Are you from Capetown originally? I think I hear a definite SA accent. I have made ketchup/catsup a couple of times, much superior to store bought, but a real effort to do, I think that if you get in the rhythm of doing it, it is as much of a chore.

    Who said where nuts to make it! WELL YOUR NUTS IF YOU DON'T MAKE IT! It's 10x better than store bought! no can shit >>> I use my tomato base to make ketchup, past , and sauces> My base is > Fresh squeeze tomato pulp, salt, cayenne pepper, blended up. is my base, I freeze it in baggies, This is what i make things from> I also freeze the tomato juice for drinks and things

    Great stuff.
    I told my mum you use of a slow cooker cuz she has the exact same one! CHILLI JAM was on the go over night! Pressure cooker relegated!!! She just discovered UA-cam.. although i sent this video after she started the batch....
    ✌One question though. She has half dozen Scotch Bonnet plants 4foot tall in tubs that produce a helluva lot of fruit... But they are not as HOT as last year. Should the chillies be re-potted ..or do you use special feed. My Mum lives in southern Spain & has a very flowery garden with big rosemary bushes growing randomly . The bees love em .       With regards to get plants....many chilli plants produce the best pods in the first 2 to 3 years. You could try reporting into fresh compost (like the soil recipe I show in this video: ua-cam.com/video/hbcRpC7vG-c/v-deo.html). You should be giving them fresh potting soil each year anyway....chilli plants need a lot of nutrients.     I cheat> This is my secret hot sauce! I can't make it any better, nor faster. 1 bottle of Louisiana Hot Sauce, 1 bottle same size of Valentina Hot sauce . Pour them into a pitcher, mix em up good pour them back into the same bottles LMAO Hey ITS GOOD! The Valentina rich and flavorful , the Louisiana more vinegar THEY BLEND EXCELLENT! just a quick, cheap, easy! MUST HAVE NOW HOT SAUCE!

    Yes i make it! I love spicy ketchup lots of cayenne and a touch of honey> Fast and thicker way is> juice the tomato's! BY SQUEEZING THE JUICE OUT > Save the juice FOR V8 drink. This cuts down on cooking time, and its thicker! GOOD JOB looks good

    A tip for your subscribers.
    A smoker box can be made with a couple of tin cans or one tin can and aluminum foil.
    The tin cans can't have a coating on the inside.
    You have to know how to handle a drill.
    But it isn't that hard.
    Also store bought liquid smoke works well.
    Thats a lovely barbecue.😊

    First recipe I ever try from ChilliChump. I had to substitute a few things. I used fermented cherry tomatoes for all tomatoes, so I omitted the salt.
    The public market bought so called piri piri chillies where not as hot as my home grown regular Cayenne peppers. Something was wrong about them. So I added 1.4 grams of fresh Trinidad Moruga Scorpion Butch T., for the extra sting.
    Did not change anything else.
    I was tuned on Frank Zappa when I home canned it in 1 cup (250 ml) jars.
    I labelled the jars as “Poodle bite hot chilli ketchup”, because that’s Dirty Love !

    I really appreciate these recipes. I’ve been growing hot peppers for my guys but I have no idea what to do with the harvest. We usually give them away or compost the surplus. I’m looking forward to expanding my cooking IQ. Thank you!

    YES SPICY KETCHUP IS AWESOME i do love it and a little bit of honey and garlic> i made a green jalaeno sauce use honey , garlic, onions, oil, cilantro, lime,, salt pepper, the honey really made it

    Is it best to use all fresh tomatoes or is the preferred method 1/2 tins and 1/2 fresh? Curious why this is the approach. Great stuff! New subscriber.

      You can use all fresh. But I find that if you are buying tomatoes from a supermarket they aren't as flavourful as they could be. If you grow your own then they will taste much better, and will work great for using them only. Tinned tomatoes help when you don't have flavourful store bought tomatoes

    Store bought ketchup are mostly sugar solutions. This ketchup has all the healthy ingredients except for some sugar. Thanks for another informative video

    Nice thing that we saw your small smoke box, some inspiration for those on a strict budget.
    In India the ladies place the items to be smoked (say 3 to 4 boiled potatoes) in a metal bowl or utensil, leaving a void or gap in the centre.
    A burning coal/coals are placed in this area and ghee(clarified butter) is spooned on to them.
    A simple lid is used to cover this for around 5 minutes or so!

    got my ketchup mix in the crockpot now can't wait to try it out. couldn't find fennel or coriander seeds so I used cilantro and left out the fennel and added a little extra vinegar

    Not enough tomatoes to can, too many to eat. What to do? Spicy ketchup!!!!!! It is AMAZING! I used the peppers I had~ Aji Rico, jalapeños and one red Monzano pepper. I used my sandwich slicer tomatoes since I didn’t have the sauce tomatoes. It didn’t matter, it thickened up perfectly. I didn’t use fennel. The finished product is so delicious! A little sweet with a spicy finish. Thank you CC! As always, your recipes are the best. Love your book. People that don’t have it, should get it.

    i still have 1 or 2 jars of "hot sauce" from last yr.... i never bother fermenting it.. ( cooking and reducing it does the job), nor do i ever want to sive it....evrything i put in it is edible, therefore i rather eat it all .. :D ..

    Thanks for the tip with the slow cooker - will definitely try that.
    What sort of wood chips did you use? - I can recommend apple chips. And definitely try to get a dedicated smoker - the results will be much better.

      I used apple wood pellets....not ideal! I have actually just received my bucket of apple wood chips just today...they unfortunately didn't arrive in time for this video. I am looking around for a decent smoker!

      @@ChilliChump My brother in-law uses a Big Green Egg for smoking. He made the best pork butt I've ever had when I visited them in Texas. Big Green Egg is expensive but seems to be worth the investment.

    Stumbled onto your channel quite by accident while viewing some videos for some additional tips on making hot sauce (I've always made my own as I cannot stand store bought; it's never as tasty and certainly not hot enough for my tastes). Anyway, love the two videos of yours I've watched so far and have not subscribed. Will be watching the rest of your published videos over the course of the coming weeks. Keep up the great work, buddy. (BTW, I'm a native from New Mexico here in the states. If there's one thing we seem to know, it's our peppers. I was cracking up as you did the taste taste on your weapons grade hot sauce. I've had a few moments like that over the course of my life.)

    Hey, amazing video and channel. I’ve grown chillis for years now but never done much with them, I’m in the process of making this recipe as we speak, did you ever try this with the fermented chillis/tomatoes like you mentioned?

      Thank you Chris. I've done 5 different tests on a fermented recipe for this....I am close to getting it to where I am happy with it. Still hoping to have a video done before end of this year!
