      Dan Ionut Dauceanu Chef Mark Elia of Hudson valley sausage company. This was him teaching meat fabrication at the culinary institute of America.

    I love how they're all standing around watching him like they're medical interns. Its trimming a steak, not open heart surgery.

      It is hard to get that many people around an open heart surgery. Because of the drapes for the sterile field, there is not as much room for an observer in the cephalad direction as compared to an intra-abdominal surgery

    I cut meat for 41yrs. Could have had that whole thing cut and processed in half the time and making more money. NEVER have a chef teach you how to cut meat. Half these guys cant boil water without a reciepe
