I get lost at about 0:40 .... I create the Gradient Map, I create the clipping mask, and then when I choose a gradient color (using a Photoshop preset) it turns the whole image that gradient color?? When you choose your gradient color in the video, we don't see the image change colors at all. So then when I go to draw with white, it just shows up as white, not as the gradient color I chose.

Are you following all the steps correctly? You have to change the blend mode of the black fill layer to "Screen" and then create a gradient map and clip it to the black fill layer. And when you paint, make sure the black fill layer is selected. If doing all these steps correctly, It should work.
